| My jeans are getting more and more comfortable by the day. Love handles are shrinking and last night my bf commented again that I was slimming down. whoo hoo. I'm still leaving the scale alone though. It's confirmed. I am scared of it. It's literally my new phobia. |

| WTG Christine!!! Keep it up! I don't do the all out no carb thing anymore. I'm just trying to cut out all processed and white carbs. So eating whole wheat bread, brown rice, etc, but when given the choice I opt for all veggies and no brown rice even. I am still eating burgers without the bun, knowing it is fatty. That is more of an Atkins thing I know. Trying not to do more than 2 burgers a week. I'm finally really getting the thing to cooking perfect quinoa. Just slightly less water than the 2:1 water to quinoa ratio and in the rice cooker on the brown rice setting is perfect. A tbs of olive oil and a generous pinch of salt and some herbs. It really is very tasty and a perfectly good sub in for rice. Only thing it can't sub in for is sushi rice.

| I took a spin class today. I walk into class and guess what. That old lady was the instructor. At first I was like, cr**! But to my surprise it was a good class and she worked our tails off. In fact, I took my friend as a guest with me and she couldn't hang and left the class early. LOL A delightful surprise! Maybe biking is just her thing.. IDK. But she was so funny and cute in that class. She was hootin and hollaring and all pumped up. It was hilarious.. and fun. |

| Oh that is interesting! That's great though. Me, I had a burger today. But last night for dinner I had quinoa, snow peas and shrimp stir fry with garlic and onion. Have you tried any quinoa recipes yet?

| I posted some quinoa tips a few pages back. Let me find it. I really do like it and I do not miss rice bc of it. Only thing it does not make a good substitute for is sushi rice.

| Duh, it was just a few posts up. I thought it was days or weeks ago. LOL I make one batch at a time of one cup dry. Make sure you rinse the quinoa for a few mins before you put in the rice cooker. You can cook on stovetop too in a pot but I have not had much success. If you have a rice cooker use it. SO much easier. Use brown rice setting. Ratio is 2:1 water to quinoa ratio. Use a tad less than 2 cups water. Add in about 1 tbs of olive oil, pinch of salt, any herbs you want. Yields about 3 cups cooked. Lasts me a few days. Bf eats it on occasion. If I make it as fried rice he chows down. By itself not so much. LOL I like it by itself. Quote:
