Greek Pizza (gotta thank IzzyPrincess for this one)

Pita bread cut into two circles, or pita flat bread - brush with olive oil and put under broiler for about a minute.

Top with veggies (I like mushrooms, spinach, tomatoes and green pepper), crumbled feta cheese and Zatar seasoning, sprinkle a little more olive oil. Place under broiler again for about 1 1/2 minutes.

VOILA!!!!!! Low-fat, healthy and tastes great!!!!!!!!!!!

Raw Tabouli Salad

1/4 C Quinoa, soak overnight, drain excess water, spread on plate and let sprout for a day or two

Use 1-2 bunches of curlie Parsley and a few sprigs of Mint and chop finely (or use food processor). Add onions and tomatoes to taste, also chopped finely. Add sprouted Quinoa, olive oil and fresh lemon juice to taste.


Again, super easy, very healthy for you, and tastes great!!!! Quinoa is also a complete protein, so this can easily be a meal in itself!!!

I usually get my burgers from Jandis (Jandi's Natural Market - Home Page), a health food store in Long Island. They even have a really great little eat-in cafe section. Sometimes hubby and I grab lunch or dinner (depending on what time we go) before our grocery shopping. The burgers are in the organic deli section and they are FRESH, not frozen.

The walnut meat recipe that I posted is more for like tacos (like ground "beef") but I guess you could make it into patties -- I never tried it but I will the next time I whip up a batch!

Some people don't have stores by them that sell raw burgers fresh. Jandis isn't by me -- it's about a 30 minute drive -- but I try to go every 2 weeks to keep my kitchen stocked lol Sometimes it's just easier for people to go to their local store and buy the frozen burgers. So, here are some you can buy that are SOY FREE:

This link is for Sunshine Burgers. I like them but still don't eat a lot of them because they contain grains -- and vegans stay away from that. But like I said, I'm not 100% vegan. So I do eat these once in a while or if I didn't get over to Jandis to buy my raw burgers. These are really yummy. I usually only buy the ORIGINAL SUNSHINE BURGER and the GARDEN SUNSHINE BURGER because they are only 190 calories, whereas the other 2 burgers are 240 and 250 calories. These are also USDA Organic and a nice option for those staying away from Soy.

OMG OMG OMG I just has a Sunshine veggie burger, the herb one and it was sooooo GOOD! I ate it with whole wheat burger buns and i put lettuce, tomato, mushrooms, and ketchup and it was perfect!! Ever since ive been a vegetarian ive been eating the best things, i love it. I also bought the Amy burgers and mornign star but havent tried them yet, but theres no soy in the sunshine ones so thats good. I also bought the quorn fake chicken buffalo but havent tried them, i think tom. i will! lol

Im gluten intolerant, so I eat a lot of rice. And Ive tried to be creative.

I make veggie california rolls (sushi). Put the nori (dried seaweed) on a bamboo roller, add sticky rice (rice with sugar/sushi vinegar), then put on strips of cooked carrot, cucumber, and zuchini. Also, I make a lot of cajun red beans and rice, split pea soup with carrots, and zuchini parmesan with rice noodles.

I'm so glad you liked it!! I love them and they taste awesome. I usually do what you did -- add mushrooms, lettuce, tomato (plus some red onion and pickles hehe) and it's like a big mac lol

I know you can order them on-line in case you can't find them locally but I always try to get them in store to save on shipping.

I make something similar to this. I use whole wheat pitas (the 70 calories ones) and brush w/ coconut oil (it's healthier than olive oil but I do use olive oil still for other things) then I add mushrooms, black olives, tomatoes chopped up really small, red onion and frozen spinach. I mostly use fresh spinach but for this recipe I use frozen and it just comes out better. I love it!

We had Quorn Chik'n Nuggets for dinner and they were so good! They were very comparable to actual chicken nuggets. Tomorrow night we are going to have the Naked Chik'n Cutlets.

I'm excited! I think I've finally found a meat alternative that I actually like!

Yay! I'm so glad you liked them! I put the naked ones in a maranade as though they were raw chicken breasts and they are really good.
