Donating YT 11K Club Member | Vegetarian recipes So i've been a Vegetarian for 2 months now and being that im not that creative in the kitchen, (my bf is the cook here and he eats meat still) , i was wondering if anyone has any good vegetarian recipes for me to try to make, besides salads lol I'm open to trying anything, though im not the best cook So if anyone has recipes please shoot

| I'm not a vegetarian, so not much help but this recipe did come to mind. It is more of a side dish and tastes sooooo good. Fresh Corn Salsa recipe at Kraftfoods.com

| Here are a few soups that are always a hit around my house. These are just a few I have on my computer but I'll post a few other recipes later. You can also get lots of yummy recipes here: Fatfree Vegan Recipes Recipes for the Vegan / Vegetarian Diet Green Minestrone 1 onion 2 celery rib 2 garlic cloves 1 zucchini 1 bay leaf, whole 1 can white beans, canned 8 cups vegetable broth 1 cup ditalini 1/2 pound green beans 10 ounces spinach leaves 12 basil leaves 1. Sautee onion, celery, garlic, zucchini and bay, salt and pepper 2. Add broth, bring to a boil add beans and pasta and green beans, bring to a boil, 8 min. 3. Stir in spinach basil Baked Potato Soup 2 1/2 pounds baking potatoes 1/4 cup all-purpose flour 6 cups skim milk 1 cup reduced fat cheddar cheese, extra sharp 1 teaspoon salt 1/2 teaspoon black pepper 1 cup sour supreme (or sour cream) 3/4 cup green onion (optional) 6 slices veggie bacon (Morning Star) 1. Bake potatoes in oven, cool, discard skin and coursly chop 2. In pot, add flour, gradually add milk, cook over med. till thick and bubbly, at least 8 min. 3. Add potatoes, cheese salt and pepper 4. Stir in sour supreme and 1/2 c onions 5. Cook till heated through 6. Serve topped with veggie bacon

YT 500 Club Member | Try the Moosewood Restaurants cookbooks. The low-fat cookbook is great and has lots of easy recipes that use common kitchen ingredients (you don't have to go out and buy all kind of stuff you've never heard of before.) Also, try beans - black beans, garbanzo beans, pinto beans are all good and work really well in most salads. Beans are high in protein and fiber, so they keep you full without lots of fat. Quorn brand makes some really yummy chicken substitutes. You can usually find Quorn at co-ops or Whole Foods. The chick'n cutlets with gruyere (sp?) are to die for! Yum. Morningstar makes really yummy breakfast "sausages" and buffalo "wings" if you're craving meat-y things without the meat. Good luck! (This is from Sophie's Mom's daughter)

| For a really quick and easy meal you can make tacos (however you usually do- a kit or whatever) using Boca Crumbles instead of ground beef. My husband eats meat and he'll eat these. Also soft tacos with vegetarian refried beans, a mixture of corn and black beans and whatever else you like (salsa, cheese, lettuce, tomato, whatever) is good. I also make spaghetti from jarred sauce and my husband will grill italian sausage to add to his or I'll split the jar and put meatballs in half and leave half plain. I also do the same with fettucini and alfredo sauce adding broccoli to the sauce and my husband grills some chicken for his. These are some of my lazy night meals.

| Yves Ground "meat" also excellent! Can find them in any grocery store--the produce section where they have veg/tofu products. I make burritos with them and NO one ever knows they're not eating meat. So you could share with your BF. |
