Im gluten intolerant, so I eat a lot of rice. And Ive tried to be creative.
I make veggie california rolls (sushi). Put the nori (dried seaweed) on a bamboo roller, add sticky rice (rice with sugar/sushi vinegar), then put on strips of cooked carrot, cucumber, and zuchini. Then I add cream cheese and roll it up. Its so good! Heres a site that shows you how to roll it:

Also, I make a lot of cajun red beans and rice, split pea soup with carrots, and zuchini parmesan with rice noodles.
