Pita bread cut into two circles, or pita flat bread - brush with olive oil and put under broiler for about a minute.

I make something similar to this. I use whole wheat pitas (the 70 calories ones) and brush w/ coconut oil (it's healthier than olive oil but I do use olive oil still for other things) then I add mushrooms, black olives, tomatoes chopped up really small, red onion and frozen spinach. I mostly use fresh spinach but for this recipe I use frozen and it just comes out better. I love it!
