				   |      Lol honestly Jacqui im sure the dish you were talking about is way more flavorful...lutefisk is a scandanavian dish...dried cod soaked in lye...sounds gross..I just remember my mom soaks it for a certain amount of time in water to thaw it and then bakes it...if you soak it too long no flavor...if you bake it too long it turns to jelly.  Very few people like it just mainly old timers of scandanavian descent....my mom makes it for thanksgiving christmas easter and I always have to have a bit w melted butter...

   it does sound gross, sorry not trying to insult, or offend....But Ackee and Saltfish is amazing, at least Jamaican's or those of West Indian decent seem to think so.Is lutefisk seasoned with anything?

				   |      I was home alone, and decided I wanted tostadas with fresh frijoles fritos. (Refried beans) My mom has always been a health nut, so instead of making them in lard as is traditional, my mom taught us to use a little bit of olive oil, you just throw in a dried chile and it adds a very nice flavor. I put in the oil and let it warm up before putting in the chile. Something happened in another room, and I left the kitchen to go check it out. I forgot all about being hungry and went to watch tv. By the time I remembered the oil had completely burned off. Or so I thought. When I moved my small pot, the remains oil caught on fire! I didn't know about needing to smother oil fires. Instead, I put it under running water. *poof*

 OOPS! Now unless they specifically tell us in school that oil fires need to be smothered, how would you know? They teach us stop, drop and roll, but not about what happens in the kitchen! I'm lucky I never caught anything on fire in the kitchen growing up. It was just me and my brother as pre teens. But once my bro put an Arby's sandwich with the foil wrapper in the microwave. He had know idea it would catch fire. Good thing I was nearby and stopped the timer.

 Okay what else goes in Ackee and Saltfish Garlic Onion Scallion Tomatoe Black Pepper Thyme Garlic Powder Canned Ackee...fresh is to difficult to make...it not done properly, it is poisonus, best to go with canned Boneless Saltfish Scotch Bonnet Peppers bacon....optional I don't measure anything....add your ingredients and taste test....oh forgot green or red pepper.....trial and error..... Come visit me and I will gladly make it for you!   My door is always open!Served with green banana and yam,(yellow or white) boiled dumplings or fried dumplings....man gonna go soak some saltfish....Sunday morning breakfast!!!!! Yummy, just made myself hungary!

 ![]() When the hurricane hit J.A. ackee was scarce.....so expensive to buy, but usually about five dollars a tin/can. If picked too soon they are poisonous as well...they have a brown shell, with the fruit inside.

				   |      I'm infamous for my cooking blunders among my friends!  LOL    So I was like 12 and was going to make a chocolate cake for my grandparents house. The recipe called for a cup of strong coffee. I didn't know it meant brewed coffee, so I took out the coffee grounds and measured out a cup and dumped it in. Luckily I told my Mom that the recipe was weird and what I did and she took it out of the oven and threw it away! HAHA I'd have made a lot of jittery people that day! I burnt a boiled dinner, literally! The ham stuck to the bottom of the pan (that was FULL of water) and burnt! LOL Made french toast mix when I was young and didn't know I could reuse the batter another time, so I made 3 loaves of french toast and invited everyone we knew to come for breakfast! LOL there are soooo many more stories! I was trying to boil a pot of water and it would not boil, like 30 mins later, still nothing. I didn't get it at all. I was sooooo irritated that I thought I'd start over and dumped out all the water and got new water! LOL Come to find out there was a switch on my stovetop that made the heating element bigger for larger pans. My friend turned it on and lo and behold, the water boiled! LOL Now the saddest part of this story. I lived in my own condo for about a year at that point with apparently no clue how to use the stove. This only happened maybe 5 years ago... which put me at 31 years old!!!! HAHAHAHAHAHAHA Do not attempt to make mixed frozen drinks in a food processor when you don't have a blender. YEAH... mudslides all over the ceiling, cabinets, counters, floor!! Lastly I tried to make oatmeal cookies one time when I was kid. They were coming out not wet enough and I showed my mom and she thought she would add a bit of milk to them, so she did and walked away, but they were still too dry, so I added more and more and more until I could pratically pour them on the baking sheet. I baked them and they were soooo horrible my brothers and parents were spitting them out and calling them piddle puddle cookies! Oh boy.... Im almost embarrassed posting this!
