| Yummy Broccoli Salad - People actually ask me to bring this to dinners. Broccoli Summer Salad Dressing ingredients: 1 c. mayonnaise 3 T. cider vinegar 1/2 c. sugar Salad ingredients: 1 red onion (this can be omitted but I like it) 2 fresh broccoli heads, washed and cut into bite-size pieces 1 pound bacon, cooked and crushed (crush in a paper towel when cooled, I use Turkey bacon most the time) 1 can honey roasted peanuts (I use Cashews sometimes). Shredded Cheddar Cheese Mix together the ingredients for the dressing ahead of time. Twenty minutes before serving, combine the onion, broccoli, bacon and salad dressing. Mix well. Garnish with the honey roasted peanuts (cashews) and cheese just before serving.

| "Borrowed" from Rachael Ray - I make this a lot in the summer and serve it as the main course along with homemade Pita Chips. Tomato, Onion, and Cucumber Salad Recipe courtesy Rachael Ray 5 medium plum tomatoes, halved lengthwise, seeded, and thinly sliced 1/4 red onion, peeled, halved lengthwise, and thinly sliced 1 Kirby cucumber, halved lengthwise and thinly sliced A generous drizzle of extra-virgin olive oil, about 2 tablespoons 2 splashes red wine vinegar Coarse salt and black pepper Dress the tomatoes, onions, and cucumber with olive oil, red wine vinegar, salt, and pepper. Let stand while you prepare dinner, about 20 minutes. Re-toss and serve salad with crusty bread for mopping up juices and oil.

| Question to all you cooks out there.... How do you grill your chicken? What do you add to the chicken to flavor it? I have one of those George Foreman grills (my big bro bought it) and I'm wondering if I can use that to quickly prepare some chicken breast for a quick yummy salad, or meal. I want to cook more, and I'm hoping once I move out with my bro, I'll have the chance.

| I make my chicken a variety of ways, Balsamic Chicken on the stove top or grill it in the oven with a grill pan. I really like the Balsamic Chicken for salads, it adds a lot of flavor. I have a lot of recipes that I will share if needed. 5 years ago I decided to stop eating fast food everynight and taught myself to cook - kind of.

I use a ton of different seasonings- usually mixing up my own. I start with salt and pepper and then just add a few other spices you like. Or you can start with some of the pre-made spice mixes- they usually tell you if they are good for poultry, fish, or beef.

It's 5 ingredients, cactus (nopal) leaf you cut off the pointy things, chop it up and boil it with a pinch of salt, and a small slice of onion. That's set aside to cool and drain. Then you chop up tomato, onions, and cilantro. You toss it all together, and then sprinkle fresh Mexican cheese on top. Then just enjoy!

| I'm a cook "every" night kind of person, and I don't eat any sugars of any kind, nor any flours. So...I grill a LOT My "easiest" favorite way is: put chicken breasts in a ziploc with Paul Newman's Olive Oil and Vinegar Dressing, marinate overnight, let reach a warmer temp on the counter for about an hour, then grill. For the balsamic version, just pour some balsamic vinegar in the bag with the dressing and shake up. Also, you can clean and trim your chicken breasts and put in the freezer WITH the marinade, to pull out on a morning when you're busy, thaw then grill. Looking forward to grilling weather!
