| Ideas for lunch potluck We're having a potluck at work for lunch on Thursday and I can't think of anything fun to make! So far, people are bringing garden salad, potato salad, chips and salsa, spinach dip, vegetable and fruit trays... I will grab some groceries tomorrow and make whatever it is after work. I'm looking for something that is easy to make and can be served cold. Any ideas??? Our meat is going to be chicken wings, so I'm looking for a side

| Not sure about "fun" but deviled eggs always go over well. I have never had one to bring home when I take them. It sounds like they would go well with the other food and they are easy to eat with your hands. A fun item is fruit pizza! Another crowd pleaser, super pretty and pretty good for you! Since someone is already bringing fruit trays though, not sure about it. Little Cocktail weenies mixed with one jar Chili Sauce and one Jar of Grape Jelly, simmered in a crock pt are also easy & good for pot lucks. Someone told me about making this with Cranberry sauce instead of the Grape Jelly. I have not tried it yet, but it sounded good. Fruit Pizza recipe: 1 package (18 ounces) refrigerated sugar cookie dough 1 package (8 ounces) cream cheese softened 1/3 cup sugar 4 cups assorted fresh fruit such as strawberries, bananas, kiwi, blueberries, etc (any fruit really) Preheat oven to 350° F. Place dough on round baking stone and cook 18-20 minutes until golden brown. Remove from oven and cool. For topping, combine cream cheese and sugar and spread over cookie dough, then start placing on the fruit.

| Deviled eggs are pretty easy. I just boil my eggs, peel, cut in half, & remove the yolk to a separate bowl. Use a fork or an electric mixer to make the yolks into a fine crumble. Add a little mustard, mayonnaisse, salt, pepper, pickle relish, and a bit of sugar (to countermand the pickle relish tartness). I usually use the mixer again to really mix it up well & smooth. Then fill your eggs. You can do this with a spoon, or get fancy and use a tube decorator. I use the Pampered Chef decorator to give them a fancy piped look. Then lightly sprinkle with a little papricka and they are done! MMMMMMMMMMmmmmmm! Some use a little different recipe, depending on tastes but this one never fails me. I don't have amounts written anywhere, you go more by the way it looks & texture. Tasting along the way is mandatory (If you use one of the plastic egg carriers, be careful with the paprika. It will stain some plastics.)

| I just read this after I posted -- you are right -- much better to ask mom and let her be of help! Besides, she will have the recipe that you grew up liking.

| I think what my mom does is similar to your recipe I will find out tonight! It seems pretty easy though. I was actually just asking her about deviled eggs a few weeks ago when I went home to visit! I haven't had them in years!

My sister makes these little salami wraps. they are just a small slice of salami with cream cheese spread in the middle. You can also do it with ham.

Chili Cheese Pinwheels are to die for. They are fairly easy to make..... 2 pkg cream cheese room temp (I use the "real stuff" but you can substitute low fat) 2 cans chopped green chilis 2 cans chopped black olives 1/2 bunch finely chopped green onions Hot Sauce to taste 8 - 10 lg. flour tortillas (I kinda cut the corners off to make them more square, they roll up better. Your favorite Salsa Mix the first 5 ingredients. Use a spatula to spread the cream cheese mixture over the flour tortilla - roll up jelly roll style, refrigerate for a couple of hours to let the cream cheese firm up and then slice in 3/4" to 1" pieces. Place on tray with the cut side up -- they are very pretty and are yummy beyond belief. They are fantastic eaten plain but even better with a spoon of salsa on top. | |

| What about pizza dip or taco salad. Pizza dip: mix equal parts of cream cheese and sour cream, cover with salsa and top with cheese and veggies like tomatoes, onions, green peppers etc. taco salad: Mix in a bowl, cheddar cheese, lettus, and any favorite taco toppings, crush a bunch of hard taco shells or nacho chips, before serving add in warm taco meat (hamburger with taco sauce) stir and serve.

| Hi... a popular item I'm often asked for are my tortilla roll-ups. You combine cream cheese, cheddar cheese, diced black olives, sliced green olives and diced green chiles. Then you spread it on a flour tortilla, roll it up and wrap it in cling wrap. Let is refrigerate for at least 4 hrs. (I usually do it overnight) and then slice each roll into about 1/2 " slices. Also, for meatless appetizers, dips are always good. And there are so many choices... artichoke (hot or cold), artichoke w/crab, shrimp and cheddar cheese, avocado/blue cheese, etc. I've also made stuffed pasta shells w/a shrimp mixture.

| Ok guys, I think I need to plan a bunch of summer get-togethers so I can make all of these recipes! They all sound so good! I talked with my mom last night and asked about her recipe for deviled eggs. She doesn't use a recipe (of course ) but she said all she does is mix the yolks with mayo, dry mustard, salt and pepper, and then scoops them back into the egg halves and sprinkles paprika on top. That's easy enough so I think I'll try it her way this time Less groceries to buy! There will be about 20 people there... how many do you think I should make? I was thinking about 15 eggs for 30 halves... some people might have two halves, some might not have any at all. My bf got all excited and said he wants some too so I'll make some extra to keep at home just in case there aren't any leftovers
