| ![]() White Chocolate Pumpkin Cheesecake Crust 2 cups gingersnaps (whole) 6 tablespoons butter 1 ½ tablespoons brown sugar Filling 3 8 ounce cream cheese (softened) ¾ cup pumpkin ¾ cup melted white chocolate 1 cup sugar 3 eggs 1 teaspoon vanilla ¼ teaspoon nutmeg 1 teaspoon cinnamon Topping ½ cup almonds 1 teaspoon sugar 2 tablespoons butter Preheat oven to 350 degrees. Wrap outside of 9-inch springform pan with foil. In food processor, grind gingersnaps. Add brown sugar and melted butter and press into bottom of pan. Bake 5-7 minutes. (I had to bake mine longer because crust still looked too soupy after 7 minutes.) Take out and keep oven at 350. Mix cream cheese and sugar until smooth. Add the rest of the ingredients and process until completely smooth. Pour mixture into prepared crust and bake 50 minutes to an hour, until cheesecake starts to crack. While cooling, process the almonds, butter, and sugar in the food processor. Spread evenly on cookie sheet and put in the oven for 6-7 minutes until starting to toast. Spread evenly on top of cheesecake and cool 4-5 hours, remove ring of pan and serve. ************************************************** **** We live in Texas, and everyone has to have a good chili recipe..... so here is one I use a lot. Larry is my hubby. We drink the rest of the beer and whiskey while we are cooking, which makes for a fun time. I also have a really good Chili recipe using chicken that I will try to find and post later. LARRY’S CHILI 6 lb ground meat 2 lb sausage 2 onions 4-6 cloves garlic crushed 3qts beef broth onion powder salt black pepper cumin coriander seeds Mix all together and cook in large skillet until meat is gray (about 20 min.) In large pot mix the following: 1/3cup paprika (or more) 2 bottles Mexene chili powder (large bottles) 2 cans chopped green chilies 3 cans Rotel tomatoes and chilies 3 cans Hunts crushed tomatoes (28 oz size cans) cayenne pepper crushed red pepper 2 Corona beers Louisiana Hot Sauce Wesson oil Oregano 1 lg. can tomato paste 2 oz. whiskey 4 -6 cups water Jalapeño pepper chopped Cook about 10 min. then add the meat mixture and simmer 3 hrs or more.

| ![]() 2 cans diced tomatos ( i usually use Del Monte w/onion) 1/4 bunch of Cilantro 2 Whole tomatos 1 large onion (i use 1/2 yellow 1/2 white) 2-3 Jalepeno's depending on heat you want 1/4 cup Tamarron Vinegar 1 packet sweet-n-low 1 tablespoon chili powder 1 tablespoon garlic salt. throw all raw ingredients into food processor chop to desired consistency then add canned and wet ingredients.

| ![]() here's one of my favorite show stoppers. You get zucchini mushrooms eggplant cherry tomatoes pearl onions pineapple and yellow, red, or orange bell pepper. The big things you cut in chunks, and then you put them in some random variety on a skewer. Then You glaze them with: 2 tablespoons of Honey 2 tablespoons dijon mustard salt and pepper 1 Tablespoon of Olive Oil IT'S AWESOME! AND HEALTHY!

Celery Seed 10 large or 12 med fresh organic Basil Leaves 1/2 cup "no salted" butter or your choice 2 1/2 Cups Half & Half 2 med Bay Leaves ¼ Cup Flour 1 ½ veggie Bouillon or 6 cubes Combine all, except butter, flour, & veggie boullion simmer low about 1/2 hr (remove bay leaves around this time... in medium pan melt the butter add the flour (I mix the flour in a sm cup w/hot water then slowly add to melted butter(no lumps) blend togeather until creamy combine w/soup mixture, Garnish with fresh shredded parmesan cheese topped with shredded fresh chive. I do not use salt or pepper when I cook.. salt & pepper to your taste | |

Aready got my recipe book and started adding to it. | ![]() This is a really good recipe for chicken cacciatore 2 tablespoons olive oil 1 cup sliced red onion 1 medium green bell pepper cut into strips 2 cloves garlic 1lb boneless chicken breasts halves 1 can diced tomatoes with Italian herbs (contadina) 1/4 cup white wine or chicken broth 1/2 teas salt 1/4 teas ground black pepper 1 tablespoon dried basil leaves Heat oil in skillet med high heat add onion bell pepper and garlic. Add chicken cook 6-8 minutes untill chicken isnt pink Add undrained tomatoes, wine, salt, and black pepper. Simmer 5 mins. Serve over rice or cooked pasta sprinkle with basil
