White Chocolate Pumpkin Cheesecake

Crust 2 cups gingersnaps (whole)
6 tablespoons butter
1 ½ tablespoons brown sugar

Filling 3 8 ounce cream cheese (softened)
¾ cup pumpkin
¾ cup melted white chocolate
1 cup sugar
3 eggs
1 teaspoon vanilla
¼ teaspoon nutmeg
1 teaspoon cinnamon

Topping ½ cup almonds
1 teaspoon sugar
2 tablespoons butter

Preheat oven to 350 degrees. Wrap outside of 9-inch springform pan with foil. In food processor, grind gingersnaps. Add brown sugar and melted butter and press into bottom of pan. Bake 5-7 minutes. (I had to bake mine longer because crust still looked too soupy after 7 minutes.) Take out and keep oven at 350.

Mix cream cheese and sugar until smooth. Add the rest of the ingredients and process until completely smooth.

Pour mixture into prepared crust and bake 50 minutes to an hour, until cheesecake starts to crack.

While cooling, process the almonds, butter, and sugar in the food processor. Spread evenly on cookie sheet and put in the oven for 6-7 minutes until starting to toast.

Spread evenly on top of cheesecake and cool 4-5 hours, remove ring of pan and serve.

We live in Texas, and everyone has to have a good chili recipe..... so here is one I use a lot. Larry is my hubby. We drink the rest of the beer and whiskey while we are cooking, which makes for a fun time. I also have a really good Chili recipe using chicken that I will try to find and post later.

LARRY’S CHILI

6 lb ground meat
2 lb sausage
2 onions
4-6 cloves garlic crushed
3qts beef broth
onion powder
salt
black pepper
cumin
coriander seeds
Mix all together and cook in large skillet until meat is gray (about 20 min.)

In large pot mix the following:

1/3cup paprika (or more)
2 bottles Mexene chili powder (large bottles)
2 cans chopped green chilies
3 cans Rotel tomatoes and chilies
3 cans Hunts crushed tomatoes (28 oz size cans)
cayenne pepper
crushed red pepper
2 Corona beers
Louisiana Hot Sauce
Wesson oil
Oregano
1 lg. can tomato paste
2 oz. whiskey
4 -6 cups water
Jalapeño pepper chopped

Cook about 10 min. then add the meat mixture and simmer 3 hrs or more.
