2 more recipies White Chocolate Pumpkin Cheesecake
Crust 2 cups gingersnaps (whole)
6 tablespoons butter
1 ½ tablespoons brown sugar
Filling 3 8 ounce cream cheese (softened)
¾ cup pumpkin
¾ cup melted white chocolate
1 cup sugar
3 eggs
1 teaspoon vanilla
¼ teaspoon nutmeg
1 teaspoon cinnamon
Topping ½ cup almonds
1 teaspoon sugar
2 tablespoons butter
Preheat oven to 350 degrees. Wrap outside of 9-inch springform pan with foil. In food processor, grind gingersnaps. Add brown sugar and melted butter and press into bottom of pan. Bake 5-7 minutes. (I had to bake mine longer because crust still looked too soupy after 7 minutes.) Take out and keep oven at 350.
Mix cream cheese and sugar until smooth. Add the rest of the ingredients and process until completely smooth.
Pour mixture into prepared crust and bake 50 minutes to an hour, until cheesecake starts to crack.
While cooling, process the almonds, butter, and sugar in the food processor. Spread evenly on cookie sheet and put in the oven for 6-7 minutes until starting to toast.
Spread evenly on top of cheesecake and cool 4-5 hours, remove ring of pan and serve. ************************************************** **** We live in Texas, and everyone has to have a good chili recipe..... so here is one I use a lot.
