4-5 persian cucumbers
12 or so green beans
1 c water
1 1/2 c apple cider or white wine vinegar (or your fave kind)
1/2 c red wine, champagne, or balsamic vinegar (any sweeter kind)
1/2 c sugar
3 tbsp sea salt or kosher salt
1 tbsp pickling spice
1 tsp tumeric
1 tsp mustard seed
1 tsp celery seed
1 tbsp whole peppercorns
1 tsp cumin

4-5 cloves of garlic halved
1-2 whole red chiles (your fave kind)
couple sprigs of dill (opt)

Quarter the cukes, and halve the green beans (if they don't fit in the jar). Put cukes, beans, dill, chiles and garlic in the jar(s), I made two jars lol. In a saucepan add all other ingredients and boil for about 4-5 mins. Carefully pour the liquid into jars and set on countertop to cool until room temp with lids off. When room temp, put in fridge. They will be ready in a few hours or overnight.

This works really well with carrots too. I really love this recipe as it starts off sour and salty, then ends spicy and sweet.

Nevermind the reused jars.

I just went out and bought what i needed to make this..i will let you know how it turns out

I never cook my own chinese food. It's soo cheap to just buy it from a restaurant! But the green bean dish is one of my faves. It contains meat though, you just can't see it. Almost got my vegetarian cousin a long time ago. LOL

I reused the brine to make another batch. You have to add more vinegar though. The second batch is not as strong.

My DD is working at PF Chang's . We OD'd on the crispy green beans, lettuce wraps, kung pao chicken and szechuan beef!!

Not cheap there tho......except we got her employee discount so all of that plus 2 hot and sour soups and a banana "eggroll" and pineapple ice cream dessert ~ oh ~ and a kids meal.....was $43!

LOL PF Changs is not chinese food. I heard that they made up the PF Chang's concept bc non Chinese people wanted to eat chinese food but couldn't take the "authentic" atmosphere, ie the famous chinese "customer service". I can't take my chinese food any other way. Flag down a waiter, and if you're not ready to order within 15 secs they leave. When you get the food, the just plop it anywhere on the table that has space. As soon as the last dish is brought out to the table, so if the bill. Gotta love that authentic-ness!

Oh that reminds me. My mom used to "see" this guy, this not chinese know it all about chinese culture (so he thought) guy You know how many restaurants have lunch specials from 11am to 3pm? He would go at 2:45pm and expect to eat and get great service. First of all, you don't eat at a chinese restaurant and expect great service LOL. He said, the sign says until 3pm, so if I come at 2:59 I should still get the lunch special price. I would not want to piss off someone who will prepare my food, esp in a chinese restaurant! LOL 3pm is then the staff finally gets a break and gets to eat their own lunch, and then back to work to prep for dinner. Give em a break man! geez! Can you tell I did not approve of my mother dating this guy.

It's not authentic or cheap but it IS very very good! I am a foodie. Dishes have to taste great not be totally authentic to get me to return
