| Need chicken salad recipe I meant to say a Chicken Salad SANDWICH recipe I am just a basic and boring type of girl who is looking for a quick simple, no frills, and plain chicken salad recipe. Nothing fancy or sweet. I've never made chicken salad before. I thought about googling a recipe but I know you ladies have tons of tried and true recipes you can share. Thanks!

| Shucks I wish I was at work. One of our managers makes the best chicken salad I have ever eaten. I know it has mayo, celery seed, pecans and I don't know what else, but it is to die for. I won't see her until Tuesday though

| If you want just a really basic recipe, take a couple of cans of canned chicken (or boil two or three boneless breasts), drain, add a tablespoon or so of miracle whip and a tablespoon of sweet pickle relish. Salt and pepper to taste and you're done. I add a chopped up boiled egg to mine also. Make tuna salad the same way. |

| I'm not crazy about mayonnaise so I make mine like this. Boil chicken breasts in salted water. When done, let the chicken sit in the water till it cools. then take off the skin and shred the chicken with a fork. Mix the chicken with celery chopped, some red onion chopped (white onion if you don't have red) lemon juice and olive oil, salt and pepper to taste. That's it. It's good on a croissant or english muffin. |

| Mine is plain ol'e country girl style, cook chicken breast bone in for flavoring, chopped/shred however you want to do it. I use a meat grinder but I have made it without one to. I use miracle whip, celery seed, sweet relish (small amt), chopped celery, little Lawry's Seasoned Salt or reg salt and pepper. Oh, when I boil my chicken, I always boil with some chopped onions. I use miracle whip just because we don't like Mayo, so use whichever you like best. Eat & enjoy

| I would still like for you to get the recipe for me. I'm sure I'll other opportunities this summer to make it. The dh is a smoker and he smokes all summer long.

| I love chicken salad. I make a basic one by roasting chicken breasts (on the bone) in the oven. I shred the chicken when done and cooled. I add real Mayo (I hate miracle whip!), chopped celery, salt and pepper and a little garlic and onion powder. If I am in the mood for a variation, I add red grapes (I quarter them). I eat my chicken salad on rice cakes.

| I also hate Miracle Whip or low fat mayo. I have a question for the mayo haters, well maybe that's too harsh. I have a question for the mayo shunners LOL. What is it that you don't care for in mayo that you find more appealing in Miracle Whip? Is it bc we are hard programmed to know mayo is fattening and bad for us so you make yourself think you hate it and love a lesser naughty alternative? Mayo is actually very good and you can't have a delicious aioli without mayo, which is a simplly egg yolk and oil emulsion. Is it the egg yolk that turns you off? There are plenty of sauces that are basically yolk and oil emulsions, mayo type sauces. Do you not care for those either? Better question yet. Have you tired Best Foods aka Hellmans mayo? It is the best in the world. Even my foodie goddess Melinda Lee says so. Sorry to get so worked up, but I just LOVE mayo! I also don't get how people like white meat more than dark. It's just so dry compared to dark! Do people shun dark bc it's supposedly worse for you? And the skin! The skin is the best! You people throw this stuff away??? Craziness!

| Oh yeah, OP asked for recipes.... I like mine with halved red grapes (seeded of course) which makes it a bit sweet but not too sweet. I also like a crunch, but I don't care for celery, so I like some onion, nuts (pecans chopped, or if I can afford it pine nuts, if I can't sunflower seeds), shredded carrots for some more color, a bit of mustard, salt and pepper. I like mine on buttered wheat bread untoasted, with lettuce and tomato.

| Continuing on the Mayo...I think this is Mayo isn't available on the Western half of the country, but it is sooo good. If you can get it you have to try it...Duke's Mayonnaise | The Secret of Great Cooks the website also has recipes. I made a chocolate cake yesterday for DH and added about 1/4cup to it and it made the cake so moist and light. DS and DH said it was the best cake I had ever made

Donating Senior Yorkie Talker | Lila, I have a great one that I got at work this week. It was a little spicy because it had Tony Chachere's in it (I'm sure you can get that in Texas too). It is in my work bag in the car. When I get back from town I will come back and post it. It was a little fancier than what I make, but I loved it so much I am going to make it for hubby. We eat our chicken salad with wheat club crackers. |
