| Here is my recipe for Chicken Salad: rotisserie chicken skinned and removed from bone chopped celery chopped red onion chopped dried cranberries and pecans *love to add but also make w/o mayo (I've recently discovered Hellman's w/ crack black pepper~YUM!) little salt and pepper to taste if I use the Cracker Pepper Mayo I also add plain since the pepper can be very strong I love to use rotisserie chicken for salads too. My local grocery store even sells them day old cold for half price which is even better since you don't need the chicken hot for salads. It also comes off the bone easier too.

I've never heard of Duke's Mayo. Wonder if any mayo would work in a cake recipe. Can you post your cake recipe? Sounds too good to keep to yourself! ![]() Quote:

| I boil bonless chicken breast, shred it by hand and add apple and walnut's and I do use Mayo. While I don't like Mayo it does taste better with the Chicken salad than Mircle Whip. Or I boil the chicken and add cranbrerries, pineapple tidbit's and almonds with mayo. As a matter of fact I'm making some right now.

I just used a Duncan Hines chocolate cake mix and used milk instead of water, 3 eggs, cut down on the oil by half and added about 1/4 cup of mayo. It is sooo moist.

| The best I have ever had is Costco's Sonoma Chicken Salad, bar none. You can google "Costco Sonoma Chicken Salad Recipe" and you will find numerous recipes for this. It is very similar to megansmomma's recipe, maybe a few more ingredients, but the recipes you'll find in the google search will give you a good idea of measurements for the ingredients.
