| Your recipes look so good! I always say I'm going to start eating healthy, and it lasts for a week or so... and then I'm right back to where I started because I run out of things to make! I am definitely going to try your recipes! Those onion rings look delicious!

| Mango Salsa Ok Kelly! You've got me committed to the healthy cooking thing. I wanted to share my mango salsa recipe. This is excellent with Tilapia or other flaky white fish like cod. I am having leftovers for lunch with roasted plain chicken breast and steamed jasmine rice. Feel free to tweak it and share on your blog. 1 mango, peeled and diced 1 jalapeno pepper, peeled and diced 1/2 large red onion, diced 1 pickling cucumber, chopped 1/2 vine ripened tomato, chopped 3 tbsp. cilantro, chopped juice of 1 lime 1 tbsp olive oil 2 tbsp white vinegar salt and pepper to taste Refrigerate about 1/2 hour before serving. Makes about two to three one half cup servings.

| Happy Saturday everyone! I made some yummy french toast this morning for the BF and, no it's not super healthy, but I tried my best to keep the portion sizes small and modify it so the calorie count wouldn't be too bad But hey, sometimes you just have to indulge!! | Mexican Ok, Mexican food is my absolute favorite. Maybe you can help me think up a beautiful calorie/carb trimmed main dish thing, like a taco salad thingy. Lots of lettuce, maybe strips of spicy grilled chicken, little cheese, bit of beans, some avocado & tomato, salsa, and for crunch maybe just a few crushed bits of corn tortillas. I need something full of flavor and attractive to replace my usual Mex stuff like tacos, burritos, ensaladas, with rice and beans. What do you think Kelly, are you up for the challenge?
