1 mango, peeled and diced
1 jalapeno pepper, peeled and diced
1/2 large red onion, diced
1 pickling cucumber, chopped
1/2 vine ripened tomato, chopped
3 tbsp. cilantro, chopped
juice of 1 lime
1 tbsp olive oil
2 tbsp white vinegar
salt and pepper to taste
Refrigerate about 1/2 hour before serving.
Makes about two to three one half cup servings. | I made this for dinner last night to use on fish tacos. It was so delicious that I used it again this afternoon for lunch. Yummy!
