Ok, Mexican food is my absolute favorite. Maybe you can help me think up a beautiful calorie/carb trimmed main dish thing, like a taco salad thingy. Lots of lettuce, maybe strips of spicy grilled chicken, little cheese, bit of beans, some avocado & tomato, salsa, and for crunch maybe just a few crushed bits of corn tortillas.
I need something full of flavor and attractive to replace my usual Mex stuff like tacos, burritos, ensaladas, with rice and beans.
