Mango Salsa Ok Kelly! You've got me committed to the healthy cooking thing. I wanted to share my mango salsa recipe. This is excellent with Tilapia or other flaky white fish like cod. I am having leftovers for lunch with roasted plain chicken breast and steamed jasmine rice. Feel free to tweak it and share on your blog.
1 mango, peeled and diced
1 jalapeno pepper, peeled and diced
1/2 large red onion, diced
1 pickling cucumber, chopped
1/2 vine ripened tomato, chopped
3 tbsp. cilantro, chopped
juice of 1 lime
1 tbsp olive oil
2 tbsp white vinegar
salt and pepper to taste
Refrigerate about 1/2 hour before serving.
Makes about two to three one half cup servings.
