| I have a favorite dessert recipe but I can't post it til I get home. I think this is a great idea. With summer coming up, and being involved with my youngest with a traveling baseball team, I'm always looking for quick meal recipes to try. We live on salads and fruit during the summer, just too hot to fix a "heavy" meal!! Suzi |

| Hmmm...but I have so many! OK, Chocolate Chip Cheesecake: -6 oz cream cheese -1 can sweetened condensed milk -1 egg -1 tsp vanilla -1 c. milk chocolate chips...mini chips work best -1 tsp plain flour Glaze: -1/2 c milk chocolate chips -1/4 c whipping cream Shell: -1 Oreo pie shell (I'm lazy) Mix together cream cheese and condensed milk until smooth and fluffy. Add egg and vanilla. Stir together chocolate chips and flour and stir into mixture. Pour into pie shell and bake at 350 for 35 minutes. After removing, prepare and pour on glaze immediately. Melt in saucepan choc chips and whipping cream. Pour over cheesecake. Chill for 4 hours before serving. |

| This is a bit harder because I've done it so many times I don't measure anymore! Chicken Alfredo: -1/2 cup milk -1 stick butter -1 1/2 cups grated parmesian cheese (has to be grated, not the spagettii kind in a can!) -8oz cream cheese -1/2 tsp garlic salt Chicken-boiled and pulled from bone Melt together the top ingredients until smooth, adding more or less milk for desired thickness. Cook you up some noodles and mix it all together with the chicken. |

| I happen to be making one of my favorites tonight so it's on my mind right now. SO easy and yummy! Easy Enchiladas 1 lb. ground meat 3 cans Old El Paso enchilada sauce (the red sauce - MILD) 1 can cream of mushroom soup 2 lb. block of Velveeta cheese 1 pkg. 8 count large tortillas Brown meat (and onion if desired) and drain. First stir together two cans of sauce plus soup and then add this to meat. Grate about 1 to 1.5 of the 2 lb. block of Velveeta. I know it's a pain to grate Velveeta block but the already grated just isn't the same. (It's the Velveeta cheese and mushroom soup that gives these enchiladas such a creamy texture) Place two large spoonfuls of meat mixture on a tortilla and add cheese on top of that, then roll. Then place in a rectangular pan. You should have enough meat mixture to fill all 8 tortillas with just a little left over. With what you have left over in the pan (if any), add that third can of enchilada sauce to it and then pour that over the rolled enchiladas. Try to get some sauce on each of them so when they bake, they don't get crispy. Then top that with more cheese. Bake at 350 for 30 minutes. Super easy and so good. I usually use the Mild Mexican Velveeta to add a little more spice. Hope you like it!

Layer with half the ingredients of chips,cooked chicken, anaheim chilies, shredded jack cheese, pour 1/2 the sauce over this and repeat this again, pour remaining sauce on top and sprinkle with shredded cheese. Bake in oven for approx. 20 minutes on 325. Garnish with diced green onions, tomatoes, avocado and sour cream. Serve with a delicious Calabasas Salad and whammy you hit a home run Magnolia | |

| Swiss Chicken Casserole 4 cups chopped cooked chicken or turkey 2 cups croutons 1-1/2 cups Shredded Swiss Cheese 1 cup sliced celery 2/3 cup MIRACLE WHIP or MIRACLE WHIP Light Dressing 1/2 cup milk 1/4 cup chopped onion PREHEAT oven to 350°F. Mix all ingredients. SPOON into 2-qt. casserole dish. BAKE 40 min. or until heated through. It is delicious~!! |
