| I got this from the healthy section of FoodNetwork.com. We normally add 2 cups parsley instead of 2 tablespoons. Ingredients · 2 tablespoons parsley, fresh · 1 garlic clove · 1/2 cup Parmesan cheese, fat free · 1 teaspoon oregano, dried · 1 teaspoon basil, dried · 1/2 teaspoon black pepper · 1/4 teaspoon red pepper · 1 1/2 pounds chicken breast, boneless/skinless, raw · 3 tablespoons margarine, canola-based, trans-fat free Preparation Preheat oven to 375°F. Wash and mince parsley; peel and mince garlic. Combine parsley, garlic, Parmesan cheese, oregano, basil, black pepper and red pepper in a pie pan or shallow dish. Dip chicken pieces into melted margarine and then into cheese mixture. Place chicken in a shallow baking pan lightly coated with cooking spray. Drizzle any remaining margarine over chicken, and sprinkle with any remaining cheese mixture. Bake for 25 minutes or until tender and no longer pink inside. Serve immediately with a tossed salad, steamed broccoli and herb roasted potato wedges, if desired. I highly recommend food network website for lots of ideas. | Some easy lower fat ideas that I use all the time: Baked breaded chicken tenders (I use brown rice flour to coat it) Refried Beans (mash up 2 cans pinto beans with cumin/chili powder) White Turkey Chili (use ground turkey and white northern beans and make chili with it like you normally would) Rosemary Salmon (broil/grill/bake salmon steak with stalks of fresh rosemary and lemon slices on top) A bowl of Japanese Miso soup has 35 calories (but you have to like tofu and seaweed)
