I got this from the healthy section of FoodNetwork.com. We normally add 2 cups parsley instead of 2 tablespoons.

Ingredients
· 2 tablespoons parsley, fresh
· 1 garlic clove
· 1/2 cup Parmesan cheese, fat free
· 1 teaspoon oregano, dried
· 1 teaspoon basil, dried
· 1/2 teaspoon black pepper
· 1/4 teaspoon red pepper
· 1 1/2 pounds chicken breast, boneless/skinless, raw
· 3 tablespoons margarine, canola-based, trans-fat free
Preparation
Preheat oven to 375°F. Wash and mince parsley; peel and mince garlic. Combine parsley, garlic, Parmesan cheese, oregano, basil, black pepper and red pepper in a pie pan or shallow dish. Dip chicken pieces into melted margarine and then into cheese mixture. Place chicken in a shallow baking pan lightly coated with cooking spray. Drizzle any remaining margarine over chicken, and sprinkle with any remaining cheese mixture. Bake for 25 minutes or until tender and no longer pink inside. Serve immediately with a tossed salad, steamed broccoli and herb roasted potato wedges, if desired.


I highly recommend food network website for lots of ideas. They have several easy recipes on there that are healthy.

Edited: I also use eggs instead of margarine to reduce the fat.
