| Brown Rice Recipes Anybody have any good recipes that use brown rice? I like it but would like to add things to it instead of eating it plain. So does anyone have any recipes besides the common black beans and rice?

| I made a modified version of spanish rice this weekend with brown rice and then I added some organic ground beef, nutritional yeast, ground flax, ex-sharp cheddar and stuffed red and green peppers with it-----------YUM! I also like to use leftover veggies, brown rice, any beans and cheese and bits of leftover grilled chicken for a lunch that lasts right through till dinner. I also use it to make fried rice. |

| I just remembered another one. A while back I made Azuki beans (those tiny red beans) with brown rice. I cooked the rice in coconut milk and cooked the beans with some onion and garlic and maybe some fresh thyme- I can't remember exactly what all I threw in but it was good.

| I stir-fry fresh or frozen veggies with a little rice wine vinegar and some soy sauce, and serve them over brown rice. I also make chicken casserole in the winter with brown rice-just toss it in instead of the white rice, with a can of "cream of..." soup, a couple cans of water, some green beans or broccoli, and bake an hour or so. In the fall, my mom always used to throw the following into the oven, all at the same time: buttercup or acorn squash, halved with a little butter and sugar, a casserole of water/brown rice, and an apple pie. I'm not sure at what temp or for how long-but they all cooked the same amount of time at the same temp, and that made for a good autumn dinner!

| When I make my brown rice, I cook it with chicken broth instead of water. It makes a huge difference! I always add other things like carrots or broccoli or whatever I have and I love to put chick peas in it. They also sell sauces in the oriental food section and sometimes I add a little of that to it. |

| I Saute onions and garlic and the brown rice in olive oil. I season it and once the rice stars to brown I add chicken broth. YOU could use veg broth. I boil it until almost tender. Then I stir in more broth if needed and then mushrooms. I turn the heat down and put the lid on it and steam until fluffy. And yes you CAN get brown rice fluffy. If you are trying to go whole grain and want to try something different. Try Quinoa. I prefer it over brown rice with stews and such! |

| stuffed peppers (or zucchini). Cook 1lb hamburger or turkey burger crumbled. Add a couple cups of cooked brown rice, some tomato paste, garlic and Italian seasoning. If you do peppers, cut off the top of the pepper and hollow out the seeds. (bake empty face up peppers in a roasting pan covered in tin foil for 30 mins) Cut the edible part of the top (of the pepper) up in little pieces and add to the mixture above. Stuff the peppers with the mixture, add tomato paste to the top and bake on 350 covered in foil until peppers are the right softness you want. If you do zucchini - cut the zucchini length wise and bake as is in a roasting pan face up in an inch of water covered in foil for about 30 mins. Scoop out the inside of the zucchini about 1/2 inch from the peel. Add the scooped pulp to your rice & burger mixture. Stuff the zucchini with your mixture, thin layer of tomato paste on top and recover with tin foild and bake for another 1/2 hour. I do this with brown rice often and it comes out delicious!!
