stuffed peppers (or zucchini).
Cook 1lb hamburger or turkey burger crumbled. Add a couple cups of cooked brown rice, some tomato paste, garlic and Italian seasoning.
If you do peppers, cut off the top of the pepper and hollow out the seeds. (bake empty face up peppers in a roasting pan covered in tin foil for 30 mins) Cut the edible part of the top (of the pepper) up in little pieces and add to the mixture above. Stuff the peppers with the mixture, add tomato paste to the top and bake on 350 covered in foil until peppers are the right softness you want.
If you do zucchini - cut the zucchini length wise and bake as is in a roasting pan face up in an inch of water covered in foil for about 30 mins. Scoop out the inside of the zucchini about 1/2 inch from the peel. Add the scooped pulp to your rice & burger mixture. Stuff the zucchini with your mixture, thin layer of tomato paste on top and recover with tin foild and bake for another 1/2 hour.
I do this with brown rice often and it comes out delicious!!
