My love just made me a cheese omelet and fried potatoes :hearts6: which complimented my scarfed down right before that onion chili covered in sour cream, onions and cheese with intermittent bites of cottage cheese- I was starving after working on the garden all day and then shearing a goat! Lol

Okay seriously, I don't think I usually eat like that but I do think I almost always want to! :p Alas, I found out after a recent blood panel that my cholesterol is high so it has mostly been raisin bran for breakfast, chicken salad for lunch and a dinner of less fabulousness like bean burritos- perhaps the sausage apple pies are off the menu for a bit.

Tonight we had home made sushi, we cooked the sticky rice while we prepared the veggies then we coated the nori (seaweed) with sesame oil and rice vinegar and rolled up in it our rice, carrots, cucumbers, mushrooms, cabbage, green onions and shrimp. I also made peanut sauce and egg flower soup and served it all with tea. It was very good and probably better for my cholesterol.

Tonight I made summer rolls- rice paper wrappers with cannage. Carrots, celery, mishrooms, mint leaves and shrimp, Thai noodles with sesame oil and veggies and copious amounts of peanut sauce. Served with tea. Did start the day with Viking pancake breakfast though- crepes with lingonberry sauce, scrambled eggs and sausage- yum! Can't convert all at once after all....

Nah, thin with an iffy tummy so I have to eat light or small portions, even the good stuff. Wish I could pig out! I'm a foodaholic who can't hold much - no fun! :(

Pretty cheap. I could make what is a regular meal for most people last 3 meals if I wanted! On the other hand, I throw away a lot I don't eat rather than have a freezer full of small portions of this and that everywhere.

(In response to my high cholesterol I dodnt coat the salmon in mayonnaise- which is how I was taught by my father growing up and is amazingly delicious- I didn't put cheese on the broccoli and instead of a half package of bacon with the green beans I only used two pieces and just increased the onions and garlic. Baby steps here, just baby steps)

Was still primed for more Mexican tonight but instead settled for half a baked potato with sour cream, bacon, a bit of chopped onion, salt, pepper but am out of chives(a sin), niblets corn(no butter) and grape tomatoes and very sweet iced tea with lemon. Later I'm having a raspberry chocolate marshmallow Easter egg! I sure enjoyed those enchiladas yesterday - first I'd had in forever and ever. Forgotten just how much I love TexMex food.

I was still hungry after ya'lls sweet Italian sausages, turnip greens, turnips(a favorite since I was a kid), corn bread and Nutter butters so I nuked the other half of the baked potato, topped it with a heap of real butter, salt and pepper and finished it off.

Baked cod, asparagus with avacado slices and baby spinach and purple onion, with a lite spray of lemon vinegarette dressing over the entire meal! LEMON pound cake for desert!

Mmmmm.... Everything sounds so good! I am getting kinda weird since I decided to change my diet- there is this whole mental piece that goes with it that I have never had to contend with! :eek:

Sally, so good to see you posting here :) I am watching your situation with Andy closely on your other thread but I have missed seeing you here and didn't want to say so with how much you have had going on!

My work day was funny so I waited too long to eat but when I finally did I had long slices of English cucumber and baby carrots with a crazy amount of delicious hummus my man made for me (roasted the red peppers himself :hearts6: ) and a piece of flat bread. Then I had an apple walnut chicken salad with dried cranberries, blue cheese chunks and a vinaigrette of some sort. When I got home though it was two mayonnaisey Hebrew national hot dogs in soft warm white bread buns with ketchup and onions...mmm- oops. And a bowl of raisin bran.

That all sounds crazy good for a hungry woman, especially that chicken salad - mmmm - and those Hebrew Nat. hot dogs in white buns with the ketchup and onions. I'm a mustard fan w/hotdogs but I've had them with ketchup - you cannot go wrong with whatever you put on hotdogs. I'm such a fiend for them and they are so bad for you with the nitrates and stuff but I eat one every chance I feel the itch. And I love cucumbers almost as much as onions.

Oh yes...I am such a hotdog fiend myself! I did out mustard on the second one :) I love polish sausages and sauerkraut and tomatoe slices and mayonnaise is my very very favorite! Hee hee, thanks Jeannie- it is hard to be restrictive, I have never really held back ever, lol! But ya know, I like myself :lv32: an my family and the high cholesterol/heart thing is kind of an issue in my gene pool so I am really trying to take it seriously without being too terribly crazy :eek:

I know - trying to stay alive gets tedious at times, having to eat healthy, sometimes less than favorite foods, but once in a while, a splurge seems good for us psychologically. I hope I never have to totally do without my hotdogs one day. A juicy hotdog on a white bun with a good coat of mustard is just about the perfect junk food.
