When I got home from work today the rain was pouring down and the dark was setting in, I pulled on my yoga pants and a soft fleece hooded sweatshirt and snuggled up under my blankets (trying not to turn on the heater til November), I drank a pickle sized mason jar full of creamy hot cocoa and ate a little flaky crusted gravy delicious chicken pot pie. Maybe not an exercise night.....:embar: |
Tonight I came home to my wonderful man (with a cute black apron on) finishing up dinner. He made cornbread muffins from scratch, roasted delicious and well seasoned leg of lamb (which was actually young goat from our own pastures he butchered recently), steamed broccoli and a fresh spinach mix salad served with a glass of red wine. He even baked a pumpkin custard- mind you he did this while home all day with our six kids and little lilah charm and I got to have a leisurely three hour meeting at a Starbucks, attend a dog show and shop for new furniture at ikea. D@mn I love that man :love: |

My lovely neighbor brought me two huge, grilled steaks, a BBQ rib and BBQ chicken wing and drum stick Sunday night, most of which I froze. But Monday night I had part of the tender, meaty 8 inch long rib and early dinner tonight was the BBQ drum stick and Brussels Sprouts steamed with lots of real butter and onions, salt and pepper. The BBQ sauce that chicken was grilled with was delish. I don't eat much meat but when I do, it's a real treat. |
Saucy, meaty lasagna, garlic bread and fresh dark green salad with slices onions choppe tomatoes and salty crumbled crackers for dinner tonight. |

2 wholewheat pitas and humus.. sounds healthy but the pitas were EXTRA large and the meal was about 800 calories altogether.. not bad, right? but .. it's only 10:30 a.m. and I'm already on 1400 calories today! |

Roast pork and fried chicken! |
I have been feeling a little queasy lately and not very food inspired but tonight I was ready for a remedy.... After a day went by where my sustenance could be listed as: my tuna snack (ya know, bumblebee pre mix in a can with crackers), a breakfast sandwich (yes in that order) and a reasonable amount of coffee I decided the answer to my tummy was seafood! I broiled a large fillet of halibut smothered in butter and covered in garlic, lemon and spices. It's neighbor in the oven were neatly prepared scallops wrapped in pepper bacon and sprinkled with fresh ground pepper each topped with a little pad of salted butter. I also made sautéed cream scallops with ridiculous amounts of butter, copious accompaniment of onions and garlic (did I mention those are homegrown?) and covered of course in heavy cream. The salad that went with this meal was just as important, the greens mixed with fresh herbs stimulated my senses and inspired my appetite, I topped the luscious leaves with diced tomatoes, onions, English cucumbers, crackers and chunky fabulous my favorite Bleu cheese...yum! Little side bites of sliced tomatoe and lengths of cucumber (oh yes, with that chunky Bleu cheese again) with a warm, soft round of Brie cheese and crackers with honey crisp apples made the round edges to my meal...mmmm. I ate dinner by flickering candlelight with my daughters and though I had intended to pour a glass of red wine with my meal, I was so enchanted with finding my lost appetite that I completely forgot! :) |

my meals today consisted of: breakfast: all bran cereal w/low fat yogurt lunch: whole wheat pita w/humus dinner: slow cooked beef and zucchini w/tomatoes and onions over long grain white rice now, what did I just eat in my mind??? the fattest, biggest chocolate cupcake ever w/homemade cream cheese icing which is currently sitting in my fridge taunting me and making me wish diabetes was nothing more than a myth... |
