I can take one off the checklist now. I ordered a huitlacoche quesadilla. It was really good! Tasted like smoky corn, a little sweet. It was a masa tortilla lightly toasted with lettuce, tomato, yellow corn, the corn truffle, queso and crema. The pic is of it opened up so you can see what it looks like inside. It tasted much lighter than a regular quesadilla with a flour tortilla and melted cheese. Finished it off with a lengua taco.

Bf had his fave chilaquiles verde with four scrambled eggs, AND a asada torta, no frijoles

Uni was mad she didn't get any!

Check out this article I found about huitlacoche, it's more nutritious than corn!

I do agree that I had to get past the "looks" of it, I can see how most people would see this as unappetizing, but try it with your eyes closed, it is so good.

Hrmm, I've never heard of a huitlacoche quesadilla, let alone seen one on the menu anywhere. Lookin' good! NOM NOM!

I can't WAIT to have chilaquiles verde in 2 short weeks in MEXICO!!! I love them so much!!

I will seek out the huitlacoche too!! I can't let you be the only one to try them!!

Hmm, what kind of cuisine is that? I'm used to eating seafood animals brains. Grew up w mom saying if I ate fish brains is be smart. Lol they actually taste good. Crawfish, crab etc I eat the brains

Here in the south a lot of people eat pig brains, their intestines and who knows what else...ewww

I like fried intestines. There's a taiwanese dish I grew up eating, fried chitterlings. It's thinly sliced small intestine of a pig and deep fried, served with a ginger/oyster sauce. It's crunchy and chewy. It has the texture of fried fat, I guess that's why I like it.

I think a lot of people around here eat chitterlings..we don't have any specialty markets,just normal grocery stores and they all sell them. My grandma used to butcher a hog every winter and I love her fried pork skins. They had the crunchy skin and a layer of the fat, Nothing like the bagged kind
