Yorkie Kisses are the Best! Donating Member | Girl - wish I had a recipe but make really good potato salad - (at least I've been told that)...I like mine without the tang of mustard and only use Real Hellmans and chopped scallions both the green and onion part...a tiny bit of vinegar and instead of salt I use celery salt.....LOTS of eggs and finely chopped celery too.....cook the potatos so they're firm not mushy and let it sit overnight before serving |

| Like everyone else, I love my potato salad best! Whether or not it's easy is up to interpretation, I guess! Boil bite-size potato pieces, but not too long (still resists the fork a little as I do not like "mushy" potato salad). Add: Diced boiled eggs Sweet pickle relish Diced tomatoes Chopped green onion Mayonnaise or salad dressing Mustard Celery seed Salt/Pepper The only person I've ever had not like it was my sister and she's the pickiest eater you'll EVER meet! She couldn't forego the onions or tomatoes, both of which are optional. I put onions in EVERYTHING (!) and the tomatoes give it some color and a flavor that makes it different from all others. ENJOY! |

| This is how I make potato salad: peel, cube and boil one 5 lb bag of potatoes (add 2 eggs and salt to the water so the eggs can boil at the same time) finely chop 2 cleaned stalks of celery and 1/2 small onion when the potatoes are done, drain and rinse with cold water to stop cooking pour into large bowl, add mashed boiled eggs, celery, onion, 1 tsp dried dill weed, 1 small jar diced pimiento, and 1/2 c sweet pickle relish. Add enough mayonnaise to mix ingredients well and chill before serving. I'm always asked to make this for family dinners and everyone loves it. Hope this helps.

| I always look up the "how's" &"why's" of recipes from Cook's Illustrated... they test every recipe in every way they can think of to see which way produces the best results....I looked up potato salad & this is what they recommend....they wanted to know which potato made the best salad, so they tried Red Bliss, russets, all purpose, & Yukon Gold...the winner was Red potatoes.....they said the all purpose, Yukon Gold & russet where not study enough & tend to fall apart & make the salad look sloppy & they where starchy...the Red Bliss on the other hand was waxy & absorbed the other ing. better & you can save a step & you don't have to peel them..... So know matter what recipe you use the red potato may be the way to go ....that's what I use....

| This potato salad recipe is a big hit at our house. 5 lbs potatos boiled and diced red onion diced 2T sweet relish (or to taste) In separate bowl mix: 1/2 jar Hellman's mayo 3T sugar salt & pepper Add enough apple cider vinegar to make dressing thinner. Pour on potatos and let set overnight. I taste the dressing and adjust the sugar and vinegar to my taste.

| This is very easy and soooooo good. Boil a good size pot of potatoes cut in chunks ( I use russet ) boil about 8 - 10 egss, chop some dill pickles When potatoes are done drain and add enough mayo that its easy to stir add a little bit of mustard, add pickles you chopped, add eggs you chopped, stir it all up....it should stir easy and then I sprinkle Tony's seasoning on top ( cajun seasoning ) If you don't have Tony's there I am sure you can find some kind of cajun seasoning. I haven't master the baked beans yet, but if you get some good baked beans and eat it with this......next to heaven! Angie |

| When I made it for our restaurant, it went faster than I could make it. I found a little secret, just can't remember where. I used the basic ingredients (potatoes, lots of eggs, mayo, celery, onions, salt, pepper, onion and celery salt, seasoned salt - small amounts of the salts since I don't like salty foods, and added a little spicy brown mustard along with yellow mustard, a little worcestershire sauce, a pinch of white sugar and some brown sugar. Never used measurements, just started with little bits and added as needed. I also use it in macaroni salad. Good luck discovering your own special recipe .

| All these recipes are making me want some potato salad...my recipe looks like a lot of the ones posted already.....I don't like biting into raw onion so I lightly cook mine before I put it in...I sometimes add in cooked bacon pieces also....

No Longer a Member | Guess it just depends on where you're from but have never had celery in potato salad..does sound good tho. My family uses.. potatoes, onion, pickles, boiled eggs, olives, crumbled bacon, miracle whip, mustard..and small amount of pickle juice. For some color I may chop a few pimentos. |
