| ![]() You look amazing! Dieting is so difficult so it's great that you've found something that not only works, but that you are also enjoying! I just may have to pick up a book of his... it sounds interesting. Good luck to you (and you too, Jen) on your continued weight loss. I can't wait to see some final pictures!! Oh, and don't be sad about not fitting into your old favorite pants... be excited that you can go out an buy a new (smaller) wardrobe!! |

| ![]() You look so great and congratulations on your weight loss, I just needed to post here to keep up with what you are doing, I love success stories. After reading your post I to started eating raw and a bit of chicken for dinner, I will need to get some books and recipes for some variations. If you have any great recipes would you please share them. I tried ordering the box and the shipping was 45 dollars. I am not sure how much food is in there but for 145.00 I better learn to fix food for myself. Thanks for sharing your story, it is an inspiration for us all. |

| ![]() Ground Walnut Meat seasoned with Mexican spices, encased in a collard greed wrap and served with Fresh Tomato Salsa. 1 1/2 cups raw walnuts, ground in a food proceessor (to size of ground beef) 1 1/2 teaspoons ground cumin 3/4 teaspoon ground coriander 2 tablespoons Nama Shoyu (raw soy sauce) you can use regular soy sauce 3 to 4 small or medium collard green leaves (your taco shells ![]() 1 cup shredded romaine lettuce 1 recipe Fresh Tomato Salsa In a small mixing bowel, combine the walnuts, cumin, and coriander and mix well. add the nama shoyu (soy sauce) and mix well. spread aproximately 1/3 cup of the walnut mixture along the center stem of each collard green leaf, then add a layer of shreeded lettuce. top with aproximately 1/3 cup of the salsa just befor serving. Fresh Tomato Salsa EVERYTHING a great salsa should have, including enzymes! 2 cups chopped tomatos (I use as many dofferent colored tomatos as I can, and different types! It makes for a unique looking and tasting salsa!) 3/4 cup chopped fresh cilantro (I hate cilantro, but love it in this salsa!) 1/2 cup chopped yellow onions or scallions 2 table spoons fresh lemon juice 1 tablespoon olive oil 2 cloves garlic minced or put through a press 1/8 to 1/4 teaspoon of cayenne pepper depending on how hot you want it (I use 1/8, I suggest you start with 1/8 and then add more to taste, you can always add more, but you cant take it out once its in!!!) 3/4 teaspoon sea salt 1 1/2 teaspoons ground cumin 3/4 teaspoon ground coriander Combine all of the ingredients in a medium mixing bowl, mix well, and serve. This is by far one of the easiest meals to make and its a croud pleaser! My 9 year old son even loves it!!!! And a great hint.... you can make this in the moring or even the day befor! Its great served cold! or room temp... I like to double the recipie and make enough for lunch the next day!!! And I'll warn you.... Its super filling!!! When Jen came down she was amazed at how FULL she was after a single taco!! We both made a second one and she ate 1/4 of the second one and had to surrender!!! She just could not get any more down! And my own husband was just as amazed at the same thing! Its amazing how full you get on wholesome food! But you can stuff yourself on depleted foods! And your body has such an easy time digesting it because the food digests its self!!! Its full of enzymes!!! Enzymes that were ment for that exact food! When you cook the food you KILL those enzymes! And you then rely on your body to break down and digest that food... hence the gas, the bloating, the digestive upset! out bodies were not designed to breakdown all of this processed food, the artifical foods, the cooked and spent products that we feed it! This is the theroy's, science, whole basis of the raw lifestyle. and I have to say... given that eating raw has made so many positive changes for me... I have to agree with the thinking and science behind it... I don't deal with the digestive issues that I once did. I eat foods that are so nutritionally available and easy to digest, not to mention lower in calories and lower in saturated fats and higher in fiber and richer in vitamins! Anyway... I'm done ranting!!! Try the Tacos!!! Let me know what you think!!!!! I'm dying to hear your feedback!!! And if you guys dig um... I'll post a ton more fun meals for you to try!!!!! Tonight I'm making Mango sorbet!!!!! mmmmmmmmmm! K

I tell you, I went off the raw for two months and have maintained my weight... I felt like crap but I wasn't climbing up on the scales! Its not a fad, its just a very healthy way of eating... Don't get me wrong... I eat chocolate!!! Its just raw chocolate! I make it myself!! Plenty of nights we have had banannas dipped in chocolate sauce for dinner! We each get a tiny dish of rich chocolate sauce and two banannas... Its the best meal!!! And sooo good for you! That and some almond milk! Yum! Its super sinfull! but sooooo good! K

I don't really have much weight that I want to lose, but my bf and I just want to eat healthier! Jenn - Are you happy with "the box"? Is it enough for the work week? That would help me out so much!! Just what I worked on tonight was a lot. But I can already tell it will be DELICIOUS!
