| ![]() Ok sweetie.........here ya go...................wash, dry pierce with fork, coat with butter, wrap in a wet paper towel and microwave for about 5 minutes (then unwrap & poke with fork to see if it's done) Peel skin off and them just mash with fork. My girls love them mashed with goat cheese. ![]()

| ![]() If I just want to do one at a time I also wrap in tissue and pop in microwave. But if I want to do a large batch and freeze some for another time, I peel,chop and wash then put them in my electric steamer. Depending on amount can take 10-20 minutes and most if not all the nutrients are retained plus you can use some of the water in the bottom of the steamer when mashing to make it even softer ![]()

| ![]() you guys are making me hungry. I do mine a couple ways: -wash/scrub, rub with olive oil, poke a few holes in them, and bake directly on the oven rack at 350 F (threw that in there for you Canadians ![]() -I also peel them, then cut into strips the long way like steak fries, and put them on a baking sheet lined with foil. I toss them with olive oil & salt and maybe some seasoning, and bake probably 30-40 min at 350. -Got this one from a friend's mom from New Mexico (would NEVER think to do this but it's SO good): Peel sweet potatoes, cut into about 1" cubes. Put into baking pan, coat liberally with olive oil. Add 1-3 cloves of chopped garlic, 1/4 cup pine nuts, and 1/2 teaspoon (maybe? I never measure...) dried rosemary. Mix together, and bake covered for 35 min, stirring occasionally. When time is up, take out of oven and stir once more, and top with another 2 tablespoons pine nuts. Put back into oven uncovered and let roast another 10-15 minutes so the pine nuts get toasty. SO good-it's a savory dish for sweet potatoes, but a really nice change from candied yams and that sweet potato mush with marshmallows on the top! I made it for Thanksgiving last year and it was a hit-I'll be making them again this year!
