| I need help.. what to make for dinner?? Anyone?? I am at a loss.... This is my least favorite part of the day trying to figure out what to make for dinner. Any ideas???? I have chicken, pork and beef, as well as asparagus, red peppers, and zuccinni and rice and pasta and stuff I just can't seem to put anything together. PLEASE HELP ME!!!!!! Anyone??

| We had fajitas the other night and a stir fry last night........ It's no wonder why we go out to eat so often, I get so sick of having to make these decisions!!!! Is there still YT cookbooks available??

| How about a chicken pasta primavera...I use angel hair and mix in grilled (or sauteed) chicken, and sauteed veggies (I use asparagus, peppers, zuchini, grape tomatoes, and olives...but you can use whatever you like/have). The sauce can also be done many ways...but I prefer and Olive Oil, white wine, and sauteed garlic sauce. Its nice and light...great for the summer.

| If I had all that already, I'd make grilled chicken (or make a chicken picatta, a lemon chicken), roasted asparagus with parmesan and roasted tomatoes and rice pilaf. And maybe a butter lettuce salad with mandarin oranges, red onion, feta or goat cheese and toasted almonds or pecans.

| If you don't really feel like cooking, you could do my pasta with no cook sauce: 1 jar (6 oz) marinated artichoke hearts chopped 1 jar (7 oz) roasted bell pepper, chopped 1/4 cup parsley, chopped 2 Tb. sun-dried tomatoes, minced 1 Tbsp. brine cured black olives (Kalamata), slivered 1 Tbsp. red wine vinegar 1-3 cloves garlic, crushed 1/8 tsp freshly ground black pepper 1/2 cup olive oil (can use oil from artichokes and add enough to make 1/2 cup total) Combine all in a bowl; stir well. Toss hot pasta with sauce. Use penne, medium shells or fusilli (twists). Serve hot, cold, or in between.

| I don't have my exact measurements written down...or at least I can't find them in my book. I can give you my approximations and you can taste test until you are happy. or if you will be more comfortable with exact measurements...here is a link for a basic recipe for Garlic and Olive oil pasta that I had saved on my online recipe box...You can just make it as stated and then add white wine to taste and a bit of butter if you like (I usually use about a 1/2 cup of dry white wine and 2 tbls of butter).
