Ann’s Mushroom Ragout

2 tablespoons butter
1 tablespoon olive oil
8 ounces mushrooms (oyster, cremini, porto, shiitake etc), chopped
1/2 cup chopped white onion
1/2 tsp. salt
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1 fat clove garlic, minced
3/4 cup dry Marsala
2 tablespoons chopped fresh Italian parsley leaves
5 basil leaves, chopped
1/2 teaspoon all-purpose flour (+ if need thicker)
optional: ½ - ¾ c. grated parmesan (skip butter/flour if adding parmesan)

*Heat oil in large frying pan over medium-high heat. Add mushrooms and onion.
*Sprinkle w 1/2 t of salt & 1/4 t of pepper; saute until the juices evaporate, about 8 min.
*Add the garlic; saute until the mushrooms are golden brown, about 2 minutes longer.
*Decrease heat to medium-low. Add Marsala. Cover, simmer until Marsala has reduced by about half, about 5 minutes.
*Stir the flour and 2 tablespoons of butter in a small bowl to form a paste, then stir the paste into the mushroom mixture.
*Cover and simmer until the sauce thickens slightly, about 2 minutes. Remove from the heat.
*Stir in parsley and basil. Season the ragout, to taste, with more salt and pepper.
*Add parmesan, if desired, and stir.

I'm going to have to try this. Sounds wonderful!

Can't remember if you eat fish, I don't think so (?). If not, you could even do this over your tofu - bc tofu would pick up the flavors really well.

That sounds so good It should freeze great I usually undercook veggies and pasta when I'm freezing them so they don't get all mooshy.

I do eat fish and don't eat tofu. I'm going to venture into tempeh though- do you know anything about it or any tips?

LOL!!!! Boy, did I have THAT one backwards!!! I really like tempeh - it has a sort of nutty flavor. Oddly, I just realized I haven't cooked it in forever - but I've had it when out to eat alot. So I can't think of cooking tips. I have heard it's really easy (I think you can even buy little "slabs" pre-made at whole foods and/or in health area of regular grocery) to make though. It's yummy!

LOL, yeah, I really need to venture into tofu again. I made tofu stroganoff around 14 years ago and it was soooo bad! I need to get that one bad experience out of my head. Shoot, 14 years ago, anything I cooked was a crap shoot. I have seen the tempeh slabs and I have a recipe that sounds great so I'm going to give it a shot. You're so lucky you have restaurants that serve things like that- we sure don't!

I love chicken marsala. I usually make mine with the chicken, noodles, and mushrooms. I tried a new recipe last time that I wasn't too crazy about. It was too soupy or something. The carrots, celery, and onions with it sounds yummy though!

That sounds really good - especially the 'no meat' part - I'm trying to stay away from eating animal meat but it's hard.....

Do frozen dinners consist of REAL meat anyone know?
