| Here's a recipe for the cake I made for A.J's 1st birthday. 2/3 cup mashed bananas (I used baby food) 1/2 cup softened butter 3 large eggs 3/4 cup water 2 cups unbleached flour 2 tsp. baking powder 1 tsp. baking soda 2 tsp. cinamon Icing: 2 cups mashed bananas (baby food) 1 Tbl. butter 2 tsp. vanilla 3 Tbl. flour 1 tsp. cinnamon 6 Tbl. carob flour (doggy safe chocolate flavoring) In mixing bowl, beat together banana and butter until creamy. Add eggs and water; beat well. Stir in dry ingrediants and beat until smooth. Spoon batter into oiled bundt pan or cupcake tins. Bake at 350* for 35 minutes. Icing: Blend ingrediants throughly and spread onto cooled cake. Decorate with natural peanut butter, dog treats, etc ***I made it into cupcakes so it was easier to feed him. I don't remember exactly how many it made but I'm thinking somewhere around 2 dozen.
