Oh they are soft. Hallie doesn't really care for crunchy treats either
Here's the recipe (I would seriously cut it down or freeze some, it makes a bunch)
1 large sweet potato
1/4 cup vegetable oil
1/8 cup honey
1 egg, slightly beaten
1 cup unbleached flour
bake sweet potato in over for about 30min
cool, peel and cut potato into 1 inch cubes
In a mixing bowl, combine oil and honey. add egg and potato and mix thoroughly. add flour and mix well
drop spoonfuls of this wet mixture onto a lightly greased (I just used a little bit of olive oil) baking sheet.
bake for 20min
