| Lentils?!? My Sir just found out he is NOT type two diabetic, but rather, type 1.5 (LADA.) He is trying to alter his diet even more now, which means he's bringing home a lot of food I have I have no idea what to do with. Supposedly, legumes are good for diabetics. He brought home some lentils, and, finding a recipe online, I basically made "dirty rice" with them. I loaded on the spices, and some cheese, and we still werent thrilled. Does anyone have any flavorful, easy lentil recipes that wont make me dread this rabbit food? |

| I love lentils. My kids hate them. I make it like a soup. Put some olive oil in a large pot. ( I don't measure, sorry). Chop up an onion and as much garlic as you like. Saute it. Then chop up a stick of celery and a carrot and add to the pot and saute. Then add a bag of lentils and cover the lentils by about 3 inches with water. Add more water if it cooks down too much. You could also add a chicken boullion if you like (I like Goya, not too salty) or even a small can (8 ounce) tomate sauce. Salt and pepper to taste. Let it cook til the lentils are tender.(About 1 hour) Then I cook some pastina in a seperate pot and add it to the lentils. You could make any type of small macaroni or leave the lentils plain. Also you can top each bowl with grated romano or parmesean cheese. Hope this helps. |

| Thanks, I've heard of lentils in a soup, but not like this. I'm not usually a fan of non cream soups (and cream of lentils sounds icky lol) but Sir's a soup fiend, and I'm game to try anything once. |

| Lentils Recipes - Food.com I love the lentil meatloaf, lentols are substitutes for ground meat. It can be a bit dry I add turkey gravey on the top of mine as a dressing

| Thanks! Any idea if I can omit or substitute the oats? I'm trying to stay away from gluten. The second recipe listed under "most popular" recipes is the one we tried and didnt like, actually. |

| I've seen gluten free oats before, but things like that can be hard to track down sometimes, here, its a bit of a food desert. |

| Is he a vegetarian? I am Type 1 diabetic and eat very well, brought my LDL down, My HDL up and my triglycerides (sp) down. My A1C stays in the 5.5 to 6 range. I count every carb that goes in. I weigh all my food...unless we go out. Then I use the knowledge I have learned at home and make really good guesses. My average monthly BS is about 120...

| He's not a vegetarian, no. Trying to get him away from carbs is hard, because he's a southern kind of guy. We tried quinoa last night, which I like, and he didnt. |

| Like cabbage?? You can make lentils with that also and many other kinds of veggies. I wasn't to keen at first but wife eat healthy. After about 20 x eting you develop a taste for them..somewhat |
