| Carrot cake recipe Hey all! My big brother's birthday is a month away. All he wants for his birthday is a yummy carrot cake made from scratch. Problem is, all the recipes I find are jazzed up with ingredients I know he will hate. (cream cheese something or other, lemon, etc) Does anyone have a simple, yummy, basic carrot cake recipe they could share?

| carrot cake recipe 2 cups grated carrots, 3 cups flour, 1 1/2 cups Wesson oil, 2 cups sugar, 4 eggs, 2 teaspoons baking soda, 2 teaspoons baking powder, 2 teaspoons cinnamon, 1 teaspoon vanilla, 1/2 cup chopped nuts (optional). Preheat oven to 350. Grease pan (bundt or angel food pan). Place all ingredients in one bowl. Beat on medium speed for 4 minutes until smooth. Put in greased pan. Bake one hour or until inserted toothpick comes out clean. When cool, frost or dust with powdered sugar. Hope this is helpful!! |

I ♥ Joey & Ralphie! Donating Member | You can't always looks at ingredients and think that he'll hate the finished product because he doesn't like the actual ingredient. For example, some people love cream cheese frosting, who hates cream cheese. The cream cheese can make the frosting a little less sweet and give it more of a creamy taste rather than just a plain sugar taste. The secret is using the right amount of cream cheese. Also, people may think they hate pineapple, yet in the cake they would never know it's there. After all, you don't really taste the carrots, do you? Most carrot cakes have an abundance of oil, and oil actually adds very little taste, what it does do, is make the finished product taste soft and moist, however, you can use other things to do this, pineapple and applesauce will both do this, and will keep the cake really moist and you can cut the oil by 1/2. I know people think, I'm not counting calories on my birthday, but this isn't about that, the cake is actually tastier, because some carrot cakes really do have an oil aftertaste. Here's my recipe, my son's favorite cake is carrot cake, and I've tried millions or recipes, this is a real hit with everyone, and so much healthier than most cakes, but I hate to add that part! Carrot Cake 2 cups all-purpose flour2 teaspoons baking powder 1 1/2 teaspoons baking soda 1-teaspoon salt 4 eggs 3/4 cups vegetable oil 3/4cup applesauce 1 ¾ Cup sugar ¼ Cup brown sugar 2 3/4 cups shredded carrots 1 (8 ounce) can crushed pineapple, drained 1/4 teaspoon of nutmeg 1Tablespoon vanilla extract ½ teaspoon ground cloves 3/4 cup chopped walnuts 1 Tablespoon ground cinnamon 1. Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch pan. Mix together the flour, baking powder, baking soda, salt and cinnamon. Set aside. 2. In a large bowl, mix sugar, oil, and eggs. Beat in flour mixture. Stir in shredded carrots, crushed pineapple, chopped nuts. Pour into prepared pan. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool. Makes great cupcakes too. Frosting • 1/2 cup butter, softened • 4 ounces cream cheese, softened • 4 cups confectioners' sugar • 1 Tablespoon vanilla extract

I ♥ Joey & Ralphie! Donating Member | I hope you like it, it's spicy and the cream cheese frosting tastes great with the spices. Bad news is you can't tell how the finished product will turn out by tasting the batter, I'm a batter taster, and this doesn't give you a clue.

| Oh goodness, thanks for the recipe, Nancy! My 4 year anniversary with my boyfriend is next month. His mama made the BEST carrot cake, but he hasn't had it for years. Hopefully he'll love this one!! I'm gonna make it for him! (well..us )

| Oh the applesauce, nutmeg, cinnamon, cloves, etc sound to good! Too bad I don't like sweets. LOL I've never had carrot cake before. I don't think anyway.

| I can't believe that you never had carrot cake before! This is one of my ultimate faves. I am very picky with my carrot cake too. Try the right one the first time or you might not want to try it again. lol My other favorite cake is peach barvarian. YUMMY!

I ♥ Joey & Ralphie! Donating Member | So are my boys, if they knew it had pineapple in it, they wouldn't eat it. In fact, for years they wouldn't even taste it because it had "carrots." I would say that this is spicy enough to hide the taste of any vegetable or fruit. I guess it depends if he likes spices like cloves and cinnamon.

We're actually both picky. He likes what he likes, and only what he likes. He can eat that for days and not get bored. If it makes his like list, it stays forever, although it's hard for food to get on that list. Me, I like what I like but I also want variety. I love chocolate cake, but I'd hate it if I had it too often. Ice cream is the only exception. If I could I'd eat that stuff everyday, all day!
