Donating YT 500 Club Member | I need some recipe ideas for a Mexican Pot Luck! At the salon I work at we are having a pot luck on May 5th.. It's Mexican themed. So far girls are already bringing 7 layer dip, salsa and guac.. Any good recipes that would be easy to take?? Thanks!

| when we had mexican themed in our office one of my co workers took a muffin tin...put in pit pockets to make like a cup baked them and then filled them with taco ingredients it was awesome eating taco muffins!! lol just a thought...otherwise i got nothing. hope you have an awesome mexican get together.

| So this Cinco de Mayo pot luck is loosely based around mexican inspired food? LOL? All you need are Coronas or Pacifico. Done and done! Cinco de drinko!

| Ok, enough joking around. If you wanna do something easy that will keep, and needs no reheating, try coctiel de camarron, Mexican shrimp cocktail, one of my fave things ever and low fat! Shrimp, medium to large, peeled, deviened, cooked avocados, diced in small cubes tomatoes, dices as well onion, diced as well (I use sweet onion) cilantro (yuck, I hate cilantro, so I use green onion for the color) chopped jalepenos lemon or lime juice tomato paste or ketchup water salt pepper cumin (I put this in just bc I love cumin, don't think it's traditionally in there) Everything is according to your taste, so if it doesn't taste good it's not my fault Mix everything except the shrimp. If you put the cooked shrimp in the salsa, it will overcook the shrimp by the time you serve it. Keep the shrimp separate until serving time.

| Hey believe me when I say I know what you mean about regional dishes. China is the second largest country in the world and the world's most populated. Not all of us eat chow mein and fried rice, or beef and broccoli and kung pow chicken. In fact, do any of us really eat that? Pepe would eat Panda Express I think.
