| I use partially frozen. The outside is thawed and browned and the inside is usually still partially frozen.

| Furbutts = LOVE Donating Member Moderator | I had an idea/question. I was thinking of making this again...but making it w/ fish so it'd be more like fish tacos. Can you do fish in a crockpot? I know fish cooks so much faster than meat...so maybe I'd put it in for the last 1/2 hour....does anyone know?

| I made this two nights ago... just followed the recipe somewhat with no extras (2 cans of black beans and a bag of frozen corn)... it turned out very tasty. I didn't brown the chicken (DH pissed me off) and when the chicken thawed, I removed it and cut it into smaller pieces so it would cook faster. At the end, I cooked it with the lid askew to reduce the juices a bit.... IMG_0832.JPG

| I made this on Sunday. I altered the recipe a bit (as usual )2 cans of black beans frozen corn 6 tomatillos 1/2 brick low fat cream cheese cumin (plus the remainder of the recipe as written) and topped with avocado, cilantro and lime juice!!!

| IKWYM, it was great the first night... but even better the next! I'm weird too, I made it according to the recipe first, bc I figure if it's already a recipe, it must be good as is. Even though all the add-ins everyone is suggesting do sound delish! We'll be having this one again... hopefully with 'browned' chicken next time, lol.

In a nutshell, it looks the fish should be cooked on low, and could be added 30mins-2hr before it's done. It seemed the average was an hour. I will try it sometime this week and letcha know.

| Furbutts = LOVE Donating Member Moderator | I did the fish - loved it! So did hubs. So, here is what I did: I made it the regular way (with chicken in); the last hour, I took the chicken out, shredded it in a bowl, set it aside (I don't eat meat). Then I added the de-thawed fish...maybe 5-6 sm/med filets, and the cream cheese. I had it on high for the first 30 minutes of the fish, then low for last 30 minutes. I used catfish. Hubby loved! He ate his in a burrito, and added his shredded chicken into the burrito. Really a good flavor. I used Rotel (med heat) tomatoes this time, and it gave it a little more kick, which the hubs likes. I also added 1 onion, but I'm not sure it added a whole lot...but it definitely didn't hurt it. The fish kinda broke up/shredded itself, which was great. If you didn't want it to shred in the crock...then don't stir the contents in the crock while the fish is in there; remove the fish after cooking and shred on the side; and then add the cream cheese until melted. If you're a fan of fish tacos, I highly recommend!
