I've had better. I guess I like my nopales scrambled with egg. Plus I didn't use any dressing, I just used salsa. That's probably why bf didn't like it.

I've never had it like that. The way my mom makes it is tomato, onion, nopal, cilantro (you can omit) and sprinkled with queso fresco on top. When we're lazy, we bake tortillas in the oven to make tostadas, some frijoles fritos, and top it off with our ensalada de nopal. Yum yum!!!

Leftover frozen slice of Pizza Hut Pepperoni pizza heated nicely to sizzling and Diet Coke so all is right with the world in my hot little slice of heaven(106 degrees right now)! Tibbe chillin' on the cold den floor and I can't move off of the couch this afternoon. Did my work this morning but after the pizza at 12:30, I've been a vegetable.

I had tomato and onion, and also avocado, no cilantro, I hate cilantro. I guess that's why they gave me a funny look at the restaurant when I ordered it like that. You meant nopales salad, like a macaroni salad or egg salad, not really a salad. LOL

It's green isn't it?

Doesn't that count? It's not like macaroni salad because it's all "veggies." It's just not your typical lettuce salad. It's mostly cactus.
