| No, no it's crawfish here. I don't know where they call it crayfish. The food in New Orleans is very interesting. It's not a great place to be on a diet, that's for sure. I'm not native to Louisiana so the food for me is so very different from anything I'm used to eating.

| I was watching a special on Food Network and they referred to them as both crayfish and crawfish. I've never heard anyone here call them crayfish. Regardless of what they are called, they have quickly become one of my favorite foods!

| Up here in PA they're called crayfish. I have never had crawfish/crayfish. (I'm trapped in Pennsylvania Dutch cooking-land.) Are they similar to langostinos?

Crawfish just take so much effort to eat with not much meat, but when they are cooked properly oh are they SO good! and yes I love to suck the brains out of their heads ![]() ![]() I've also noticed a lot of asian buffets around here are putting crawfish on the menus, not tasty to eat those buggers when they are made in mass quantities like that, watery and rubbery, and yet I see people bringing mounds and mounds of them back to their tables

| haha, he made it out of the pot! Is it common to see them walking about your neck of the woods at all? I thought they were more of a wet habitat type creature.

| They are more of a mud habitat than water. They are commonly referred to as mud bugs. When it rains, they create dirt mounds all over the yard. I can't seem to locate any pictures of that right now, but I have tons of them somewhere on my computer.
