Does anyone remember a dessert called pineapple delight? It has a vanilla wafer crust, with a filling of brown sugar, eggs, cream, pecans, topped with crushed pineapple and whipping cream.

Well dang it all I've somehow lost my Mom's recipe, and I would love to make this for New Year's Day dessert. Mom is gone now,as well as Dad and over the holidays I try to bake her and Dad's favourite desserts.

Would by any rare chance anyone have a recipe for this?

Haven't ever made it, but I have found that you can find many favorite recipes, by googling the name such as "Pineapple Delight" and then adding one or two key ingredients like "vanilla wafers." Here's one recipe I found by doing that. Cooks.com - Recipe - Pineapple Delight

Ooh it is, come on over and you can share in our New Year's dinner.

The menu is traditional English fare this year. Roast Prime Rib - roasted squash potatoes, Yorkshire pudding, and french beans. Soup: Roasted beet borscht Salad - Mixed greens with tarragon /orange dressing drizzle.
Dessert is Pineapple delight

It's funny my husband is American and he never had a yorkshire pudding, until he met me 10 yrs ago. I always love to see people's faces when they first sample a yorkshire.

But Yorkshire's are a cook's bane at times. They I swear have a mind of their own. You can successfully have beautiful fluffy raised Yorkshires, crispy on outside, soft and light as a feather on the inside 4 times out of 5, then one day (usually with company coming), you put your yorkshires in the oven, and watch how they simply don't rise! Sigh but they still taste good. lol

That's a mouth watering meal. We had prime rib for Christmas dinner.I've never attempted to make yorkshire pudding ....but I admire them in my cookbooks. lol

Do try one day. Our secret is to make up the pudding earlier in the day and let it sit in the cold fridge. Then when your meat is resting, crank up the temperature to 450 make sure oil in pans you are using is sizzling and pour cold yorkshire into pan. Immediately pop into preheated oven

Now I understand where the name Yorkshire Terrier came from.

Oil in pans Gail, use the drippings from the roast beef

Bruce makes perfect Yorkshire puddings (although I don't think anyone can make them as well as my Uncle Horace did), although one day he almost used water instead of milk by mistake. Luckily I caught him before he had a chance to pour the water in the mixing bowl.
