You do not need a lid at all, it is sooo good, at least we like it and I never know what to do with left over chicken.. this has become a fast favorite, it was soo easy to make when I was working... My kids love it!! Please let me know how you like it

I looooove trying out new recipes! Right now I'm trying a new one. It's a baked pork chop recipe and was really easy to prepare.

Lightly grease a casserole dish, put pork chops on the bottom, pour golden cream of mushroom soup over top, then pour 2/3 cup of water and sprinkle some pepper and garlic salt to taste. Bake in oven at 350 for 30 to 40 minutes. I'm going to make some alfredo noodles for a side. Cook noodles of choice, drain, cover with alfredo sauce. Easy peasy!!

Also you could make chicken alfredo easily too. Just get some rigatoni noodles or whatever kind you prefer and brown some cubed chicken breasts. You could probably even season the chicken with whatever you want. Cook the noodles, drain them, mix with browned chicken, cover with alfredo sauce until everything is all creamy. You could top it with some italian seasoning or oregano and voila!

OOOH and I have to find my magazine that has an AMAZING lasagna recipe in it. My husband loved it and ate half of it by himself. When I find it, I'll repost with the recipe.

Okay since it looks like your a fan of chicken..... mushrooms..... and asparagus...... here is a dinner for you.......

3. Chop fresh potatoes in small chuncks. drizzle olive oil all over sprinkle garlic salt, little bit of rosemary and little bit of pepper. bake in oven on 350 till potatoes are cooked and a golden brown.

4. Now for an AMAZING asparagus recipe.... take fresh asparagus wash and cut ends off.... drizzle olive oil all over and springle with sugar.... YES sugar.... trust me!!!
Bake in oven for 20 minutes or until soft and a little bit of a crunchy look to it.


Let me know what you all think if you make this dish! Its my boyfriends favorite..... He named this meal....LOL He told his mom it was the "Baby Dont Leave Me" meal!

I made this tonight, too! DELICIOUS! The only changes that I made was I used 1.5lb of chicken, Cream of Celery soup (hubby does not do mushroom) and I made my own broth with a bouillon cube (instead of a can)....We like it... and I am about to get seconds!

I have a similar recipe to this one (so I knew I would like the one above!).

1lb chicken (cubed)
1 bag (16oz) of frozen broccoli, thawed/drained
1 can of Cream of Chicken soup
1/3 cup of sour cream
1.5 cups of shredded cheddar cheese
1 can of chicken broth (I make my own with a bouillon cube)
1 pkg of stuffing

Preheat oven to 400. Brown chicken in skillet with olive oil, salt, and pepper. In side dish, mix soup, sour cream, cheese, and broccoli. Mix in chicken. Put in 9x13 dish. Top with stuffing and drizzle the broth over the stuffing. Bake 30-40 mins.

There is one that we love... Its VERY similar to the other one.

Here's my favorite resource for recipes:

This is one of my all time fav's of Rachel Rays, Coal Miner's Pasta. (I also substitute Fettuccine for the Rigatoni pasta instead.)

Bacon and Egg Coal Miner's Pasta: Rigatoni alla Carbonara Recipe : Rachael Ray : Food Network

Ingredients

* Salt
* 1 pound rigatoni or Fettuccine Noodles
* 1/3 pound pancetta, cured Italian meat, available at deli counter, chopped
* Drizzle extra-virgin olive oil, plus 2 tablespoons (2 turns around the pan)
* 4 or 5 cloves garlic, finely chopped
* 1/4 teaspoon crushed red pepper flakes, a few pinches, crushed in palm of hand
* 1/2 cup dry white wine or chicken stock
* 2 large egg yolks
* 3 tablespoons (about 2 palmfuls) grated Parmigiano Reggiano, plus more, for sprinkling
* A handful fresh parsley leaves, finely chopped
* A few grinds black pepper

Directions

Place a large pot of water on the stove to boil. When water is rolling, add salt and pasta and cook to al dente, about 8 minutes, reserving 1/4 cup pasta water.

While pasta cooks, heat large skillet over moderate heat. Saute pancetta in a drizzle of oil until it browns, 3 to 5 minutes. Add extra-virgin olive oil, garlic, and crushed pepper flake. Saute garlic 2 minutes. Add wine or stock to the pan and reduce liquid by half, 2 minutes.

Beat together egg yolks, cheese, and while whisking vigorously, stir in a ladle of the boiling pasta water. Beat in parsley and pepper and set aside.

Drain pasta. Add pasta to pan with sauce. Toss pasta with pancetta, then add egg mixture and toss 1 minute, then remove from heat. Continue to toss until sauce is absorbed by and thickly coating the pasta. Adjust seasonings with salt and pepper and serve with extra cheese, for passing.

another EASY one that RR just reminded me of:

1 carton broth (beef or chicken)
1 pkg tortellini
1 cup fresh spinach
lemon zest
grated garlic
parm cheese

Mix first 3 together till hot then top with lemon grated garlic and parm!
it truly is THAT easy

That sounds really good too - question though - do you have to have frozen broccoli or can it be fresh?

I don't see why you can't use fresh broccoli... that would probably be even better! I always try to use fresh veggies when possible but we live in a very rural area so its more convenient to get frozen and we have a deep freeze

This was delicious!!!! My husband had seconds and got up a little while ago for a "snack."

Do you have a Cracker Barrel near you? Not only can you have dinner there.... heeheeheehee..... but they have some really good cookbooks in their store!

OMG I LOVE Cracker Barrell!!!! They have the best food ever, no matter what meal you're going there to eat! Unfortunately here in Las Vegas they don't have one and it s*cks! *set your deep fryer to about 375 degrees*
Ingredients:
-1 lb boneless skinless chicken tenderloins (or drums, thighs, whatever you want to use)
-1/2 cup soy flour
-1 tblsp poultry seasoning (I use Lawrys)
-1 tblsp garlic powder
-1/2 tblsp black ground pepper
-1/2 tblsp kosher salt
-2 eggs
-kosher salt and pepper to season chicken, to taste

In a bowl, mix together everything but the eggs then transfer to plate. In the same bowl, whisk together both eggs then transfer to separate plate. Salt and pepper your chicken (you can do this in it's own package so you don't dirty another dish), then dip the chicken strip in the batter, then the eggs, then the batter one more time (make sure it's coated well!) and drop in the fryer basket and cook 5-6 minutes. It is so tasty... enjoy!!
