Need a cheap dip to take somewhere?

The corn, although it doesn't have seeds, has those little "husks". We love corn but he can't have it. The rotel does have seeds, and we love that too! The spices in the Italian dressing can be strained out and the dressing still tastes pretty good .... ... yep, we love that too! The only thing I have found that's actually "easy" to deseed is the bell pepper and it's the only food on the planet that Patrick hates!! Everyone who doesn't have diverticulosis should be thankful. If he eats corn, nuts or anything with seeds and a tiny piece gets in one of those little "pockets" and it becomes inflamed, it sends him screaming to the hospital every time. It's kinda like a "crap shoot" to eat foods that contain seeds, etc. and hope you dodge the bullet. He just follows the doctors advice and remembers the excruciating pain! I try to improvise recipes of the foods that he loves and make them as tasty as the real thing! Now, I have to find out all the ingredients in Rotel!! Thanks for this great recipe ... I believe I can make it and he can eat it!!

I know a lot of people on the East and West coast that have no idea what Rotel is so dont worry! Here is their website so you can see what it looks like, its normally by the canned tomatos.

Ro-tel is diced tomatoes with chopped green chile peppers. I had 9-12 guest for dinner several times last week and used it in a King Ranch Chicken recipe one evening. Hmmm...glad I looked at the can again it also has a recipe for Black Bean Salsa which sounds good

1 15oz can black beans (drained and rinsed)
1 10 oz can Ro Tel tomatoes and green chiles (drained)
1/2 cup corn (frozen or canned)
1/4 cup finely chopped red onion
1/4 cup finely chopped cilantro
1 tbsp lime juice
1/4 tsp ground cumin

Mix all ingredients and refridgerate for 30 min for flavors to blend. Serve with tortilla chips, tacos, burritos etc.

It is my job to make the cheese dip at family functions.

1 lb (1/2 block) Velveeta processed cheese
1 can Rotel (I use Mild)
Melt together & keep warm in the crock pot. Serve with tortilla chips.

This dip looks kinda nasty, but tastes really good
8 oz block cream cheese
8 oz picante or salsa

Mix both together with a fork for a chunky type dip but is better mixed with a mixer. Best served with Scoop Fritos!

By the way, rotel does have seeds from tomatoes and the peppers.

Living off cheesecake sounds like a good idea!! Actually, knowing that "misery loves company", I eat the same as Patrick does. Once in a while I could kill for nuts so I will treat myself to a good Gargonzola Salad with pecans .... yummy! I only do that if we are eating out ... wouldn't have a nut in this house for anything. He's worse than a squirrel about nuts!! He would lose control and scarf them up!

Thanks for the link, the "Guac" That Rocks sounds delicious too. I will look at the ingredients on a can when I go to the store. We loved Rotel before and I believe I can duplicate it without the seeds!!

1 package imatation crab
1 can tuna
1 diced onion
mayonase
pepper and salt
I like it with trisket crackers it is sooooo good.

This one is quick and easy and i always get rave reviews when I make it.
1 large vedalia onion
1 cup mayonnaise
1 package of Kraft Italian crumbles cheese
pepper

Mix together, put in a dish and bake at 375 degrees for 1/2 hour or until top is golden brown. Serve with crackers of wheat thins.
