Ro-tel is diced tomatoes with chopped green chile peppers. I had 9-12 guest for dinner several times last week and used it in a King Ranch Chicken recipe one evening. Hmmm...glad I looked at the can again it also has a recipe for Black Bean Salsa which sounds good
1 15oz can black beans (drained and rinsed)
1 10 oz can Ro Tel tomatoes and green chiles (drained)
1/2 cup corn (frozen or canned)
1/4 cup finely chopped red onion
1/4 cup finely chopped cilantro
1 tbsp lime juice
1/4 tsp ground cumin
Mix all ingredients and refridgerate for 30 min for flavors to blend. Serve with tortilla chips, tacos, burritos etc.
