I know a lot of people on the East and West coast that have no idea what Rotel is so dont worry! Here is their website so you can see what it looks like, its normally by the canned tomatos.

The only thing I have found that's actually "easy" to deseed is the bell pepper and it's the only food on the planet that Patrick hates!! Everyone who doesn't have diverticulosis should be thankful. If he eats corn, nuts or anything with seeds and a tiny piece gets in one of those little "pockets" and it becomes inflamed, it sends him screaming to the hospital every time. It's kinda like a "crap shoot" to eat foods that contain seeds, etc. and hope you dodge the bullet. He just follows the doctors advice and remembers the excruciating pain! I try to improvise recipes of the foods that he loves and make them as tasty as the real thing! Now, I have to find out all the ingredients in Rotel!! Thanks for this great recipe ... I believe I can make it and he can eat it!! |
