I taught her the "Bang" trick to play dead after I taught her to roll over. I taught roll over by putting her in "down", and twirling my finger in front of her face and saying "over". Then we'd just roll her over on her side and treat her immediately. The "Bang" we'd do in "down", and say "bang" while pointing our fingers at her like a kid does a gun sign, and roll her just half-way, hold her there a second, and then treat her while still upside down. And, of course, LOTS of praise!
Another important thing to do: We taught ALL tricks with words and hand signals. She learned REALLY quickly that way, and can do all of her tricks either with just words or just hand signals now!
Treats we use are a mix that I make up...50% her dog food kibbles, and then I cut up some pupperoni or other soft, meaty treat into small bits. Put them all in the treat jar together, and they ALL taste like the meaty treats. I've also put in cracker crumbs, other small bits of other hard dog treats, pieces of cheerios, whatever-it all will taste GREAT to the dogs after it's been in the jar for a few hours!
