Pumpkin Roll Filling 3 eggs 1 8oz pkg cream cheese 1 cup sugar 2 tsp butter 3/4 cup flour 1 tsp vanilla 1 tsp cinnamon 1 cup powdered sugar 1 tsp baking soda 1 tsp salt 2/3 cup pumpkin Beat eggs. Add sugar, pumpkin, salt, baking soda, flour, and cinnamon. Mix Well. Grease a cookie sheet, and line with wax paper. Spread dough over wax paper. Bake at 375* for 10-15 mins. Place on towel that is sprinkled with powdered sugar. Roll up into towel to cool. When cooled, unroll, and spread on the filling. Remove towel and roll back up. | I make this for Thanksgiving but also other times too. It's easy and good. APPLE CRUMB CAKE 2 sticks butter 1 teaspoon baking soda 3 egg yolks, beaten 1 teaspoon baking powder 1 cup sugar 3 cups flour Mix all the above until it resembles cornmeal. Pat down half the mixture in a greased 9x13 inch pan. Bake 10 minutes at 400 degrees. Remove from oven. Spread 2 cans apple pie filling (or any kind you like, cherry, blueberry etc.) over the dough. Sprinkle the remaining crumb mixture on top of the filling and bake 30 to 45 minutes at 400 degrees. Cool. Cut into small squares and refrigerate. Sprinkle with powdered sugar before serving. |
