| Shrimp creole 1 can of diced tomatoes & 1 small can of tomato sauce 1 green bell pepper & 2 celery stalks chopped 1 small onion (chopped) salt & cayenne pepper to taste, a little garlic, 1 tbs worcestershire sauce and 1 tsp cajun seasoning place 1/2 stick butter & 1 tbsp of veg. oil in large pan saute the veggies, then add tomatoes, tomato sauce, salt, cayenne pepper, a little garlic, 1tsp cajun seasoning & 1 tbsp worcestershire... simmer about 452 to 60 minutes then add about 15 frozen shrimp and simmer about 5 min.serve over a plate of rice....so good

| You are welcome, LOL just seen my mistake it was suppose to be simmer 45 to 60 min add shrimp simmer for 5 more minutes

| Easy Enchilada casserole Here you go EASY Enchilada casserole 1 lb ground beef or turkey 1small onion chopped 2 garlic cloves, finely chopped 1 3/4 cups thick & chunky salsa 1 3/4 cups refried beans 1 can enchilada sauce 10oz 1/2 cup sliced black olives 10 6 inch corn tortillas sliced in half 2 cups shredded mild cheddar cheese sliced green onion (optional) preheat oven to 375 degrees cook beef, onion and garlic in large skillet until beef is browned then drain stir in salsa,beans, enchilada sauce and olives bring to boil reduced heat to low cook stirring frequently for 5 to 6 minutes next layer half of the corn tortillas on bottom of greased 13x9 baking dish cover with half of meat sauce and sprinkle with 1 cup of cheese... repeat layer bake covered for 20 min remove cover bake 5 more min or until cheese is melted... I like sour cream with mine
