Crock Pot Recipes wanted! I am looking for great crock-pot recipes. I made beef enchiladas last night in my crock pot, it was so easy, and they came out great. I'd like some more great and easy recipes! Please post them if you have any :) |
I am at work right now but this is one I love! I will post more later :) Pulled Pork (Crock Pot) 4 lbs pork roast ( shoulder or butt) 2 large onions 1 cup ginger ale 1 (18 ounce) bottles favorite barbecue sauce ( I like Sweet Baby Ray's) barbecue sauce, for serving (optional) Directions Slice one onion and place in crock pot. Put in the roast and cover with the other onion, sliced. Pour over the ginger ale. Cover and cook on LOW for about 12 hours. Remove the meat, strain and save the onions, discard all liquid. With two forks, shred the meat, discarding any remaining fat, bones or skin. Most of the fat will have melted away. Return the shredded meat and the onions to the crock pot, stir in the barbecue sauce. Continue to cook for another 4 to 6 hours on LOW. Serve with hamburger buns or rolls and additional barbecue sauce. Any leftovers freeze very well. TIP: freeze ready-made sandwiches - a scoop of meat on a bun, well-wrapped. These make a great quick meal or snack. To reheat, remove wrapping, wrap in a paper towel, and zap 1-2 minute in the microwave. Note: Shoulder or butt are recommended because the meat shreds very well. Other cuts do not shred as readily. It is a fattier cut, but the fat melts away in the cooking and is poured away when you discard the liquid. Note 2: I have an older, smaller crock pot. The above times work perfectly for me. But if you have a newer or bigger crock pot, you may need to revise times downward, esp. after the bbq sauce is added. I think you need at least a couple of hours for it all to meld, but that may be all you need. |

Lime tortilla soup Ingredients 1-2 lb. cooked chicken tenders 2-3 large potatoes 2 cans cream of chicken soup 1 can chicken broth 1/2 C. onion 1 tsp. chili powder 1 small can green chillies Fresh cilantro, to taste (optional) 3 flour tortillas Directions Cut cooked chicken tenders and potatoes into cubes. Chop onion into bite-size pieces. Place all ingredients except tortillas into a crock pot and cook on medium heat for 5-6 hours. Cut flour tortillas into small strips. Fry in batches in deep fat until slightly golden brown. Ladle soup into bowls. Top with fried tortillas , juice from 1/4 of a lime (per bowl), chopped tomatoes and avocados( and grated cheese if desired). |
Pork carnitas 2. Crockpot Carnitas Pork is actually a great source of lean protein, as long as you don't fry or bread it. This slow cooker recipe is a delicious and easy way to enjoy pork for dinner. Ingredients: 2 lbs. boneless pork shoulder (cut into 2" cubes) 1 large onion (roughly chopped) 1 12 oz. bottle of beer 1 14-15 oz. can of diced tomatoes 2 chipotle peppers in Adobo sauce Juice from 1 orange Juice from 1 lime 1 teaspoon coriander 1 teaspoon cumin 1 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 2 tablespoons vegetable oil Directions: Place pork cubes in the Crockpot along with the onions and pour the beer and orange juice over the top. Cover and cook on low for 4-6 hours. Once cooked, remove pork from juices and set aside. Once the pork has cooled, shred it using a fork or your fingers. Add the remaining ingredients (except for the vegetable oil) to a blender, cover, and puree everything until it is well blended. In a large sauté pan, heat the vegetable oil over medium heat. Once oil is hot, add the pork and sauté to crisp up some of the edges. Spoon or pour in as much of the sauce as you would like onto the pork. Continue to cook until sauce is heated through. Serve with corn tortillas, tomatoes, queso fresco, and guacamole. This recipe yields 6 servings |

I loveeee my Crock Pot! I haven't been using it as much lately. I'll have the think of the best recipes I have. I usually end up just throwing everything I can find in there and hoping for the best. :o |

chicken fillets I'm not sure. Chicken tenders are the smaller tender pieces attached to the breast and rib. long and about an inch across. Is that what a fillet is :confused::p |
Thank you! And I know the bit you mean (it's the bit I always eat first :)) out of a chicken breast fillet....I'm not sure what they're called here, but that's such a good description of them :D |
