Kinda lame question: best way to hard boil eggs?

Really, I *can* cook a little...I really can !

I've looked up many times on the net for the 'best way to make hard boiled eggs' - and they all say something different. I've tried a bunch of different methods, but they never turn out quite the way I want.

When I boil mine, the shell always sticks like I boiled it in super glue and/or the shell only comes off in these teensy little sections....rather than a nice big peel. Also, I feel like the inside yolk is sometimes kinda weird looking.

Does anyone have a tried and true method for this urgent dilemma? :D

Well, when I decide to prepare such a delicate dish... :p hahaha
I do not put my eggs in the water until it is has reached a roaring boil.
I let them boil for 14 minutes (I have elelctric) and then immediately put them in
cold water for several minutes.
I always have shells that fall off in a few large pieces. :) :)

LOL :D! I have electric too, so I bet our heat process is pretty similar. I'm not sure if I did the cold water thing...it sounds familiar, but I'm really not sure. That sounds key!

 This is pretty much the same way I cook hard boiled eggs. I used other methods for years and never liked the results. A year or so ago, I read about this method and it works perfect every time!!

The only difference is my instructions said after placing the eggs in boiling water, return to boil and set a timer for 12 minutes. It takes a minute or so for the water to return to a boil, so I bet your 14 minute instructions take that into account.

Electric stove here also, the way I boil eggs is;

1. Fill pan with water
2. Turn on medium heat and put eggs in pan
3. Once water reaches boiling point I let them boil for 10 minutes
4. After ten minutes I remove the pan from heat and run cold water on the eggs. Once I can handle the eggs I remove them from the cold water.

It works for me, I think again my buddy Rachael Ray taught me this (I consider Rachael and Paula Deen two my BFF's).

That's how I do it too. I always remove mine with a slotted spoon to a bowl of ICE water. The only time I have a problem is when I use Eggland's Best eggs. For some reason they are near impossible to peel no matter what technique is used.

I do this but add a couple teaspoons or so of vinegar in the cold water in the pan (with vinegar your eggs will never crack in the boiling water)...bring to a boil, boil 10 minutes...turn off burner and when boiling stops immediately run cold water over eggs (to stop the cooking process)...leave the pan of cold water and eggs sitting in the sink for 10 minutes and then peel. Leave them sit too long or not long enough makes them hard to peel.

I put salt in the water and boil 15 mins then put in cold water

We don't want to overwhelm you...lets just deal with the eggs today..:Dlmbo

boil the eggs atleast 15-20 min..put in cold water after..should peel just fine..and have no runny yoke..yuck!

Ha! Great topic!

My Mom's method: Fill a large pot with cold water, add some salt (makes the water boil faster and keeps eggs from cracking) and room temperature eggs. Bring to a boil and simmer for 10 minutes. Then turn off the burner and remove the pot from the heat, cover and let stand for 10 minutes. Then I set the pan under the faucet and run cold water in till cool and let them set in water till I'm ready to peel them. If I need to store them, I take them out of the water and place in a ziplock in the fridge.

The trick to peeling them later is: Take them out of the fridge and put them back into warmish water and let them warm up. If you crack one and it's hard to peel, put it back in the water cracked for a few, then try again. Egg shells are porous, so they dry out when taken out of the water.... the warmer the egg the faster it will dry out and become hard to peel. So you'll have to experiment with the timing....

My best method: WalMart used to sell an eggshaped microwave egg cooker.... best tasting HB eggs you could ever ask for on the planet.... time varies on egg temp and microwave strength.... on an 800 watter it takes 14 minutes to cook on high and 2 minutes to rest, from the fridge (room temp eggs take 2 minutes less cook time) then into cold water... same rules for peeling as above. Cons: only cooks 4 eggs at a time. (I have seen this in some common mail-order catalogs) Ha! Seems Target has it now: NordicWare Egg Boiler : Target

Next best method: I have an electric model egg cooker that does 6 eggs at a time, still better flavor than the boiled water method.... I like the timer bc I can do other things without having to watch the pot!

I boil mine for 12 minutes with a pinch of salt in the water. Run them under cold water as soon as you remove them from the stove. If you peel them as soon as they are cool enough to handle, the shells never stick.

SophieKatesMom 02-20-2011 09:38 AM

I need to start adding the salt, I will try that today and if it works I will let my BFF Rachael Ray know also.

Thanks ladies.
