| Reading all this deliciousness has made me very hungry~ I purchased a cook book when I went to Barbado's so I'm making a few things from that book coconut encrusted talapia with mango salsa crab cakes roasted potato's and string beans butternut squash soup grilled zuchini salad and a carmalized banana torte for desert

| My wife is busy coking up a storm. Family will be over so she is making a Spiral Cut Honey Baked Ham, Rack of Lamb, Baked Lasagna with Meatballs and Italian Sausage (mile and Hot), Mashed Potates, Asparagas, Sweet potatoe Fries, Salad, and other stuff that even I am not sure about. She also baked a tray of Brownies, and make a Italian Sysle Cheese Cake, Jello, and a few other desesrts. All I care about is the Lasagna and Sausage. Not a big Lamb eater, but Ham is ok! Have a great day. |

| Here's my recipe for a potato casserole. It's easy to make and yummy. You can even throw it together a day ahead and just pop it in the oven that day. POTATO CASSEROLE 1 32oz. package southern frozen hashbrowns (thawed) 2 cans cheddar cheese soup 8 oz sour cream 1/2 c. milk 1/4 c. melted butter 1/4 c. chopped onion 1 tsp. salt 1 Tbs. parsley flakes Mix all together and put in a greased 9 X 13 pan. Sprinkle with grated cheddar cheese and paprika. Bake at 300 for 1 and 1/2 hours or at 350 for 1 hour.

We did do a Easter egg hunt for the two kids but I think the most fun was had by my 33 yr old son who hid them! LOL! He spent almost a half hour hiding them in "just the right place". I tried to get everyone to play cards but they weren't going for it. It was a really nice day (in early afternoon) so they all wanted to sit outside gabbing. With my Mom, brother and kids living here - I wanted to keep the tradition going. I know that when/if the kids aren't here - it would probably be alot easier to do something a little less traditional but... after working around so many people with different nationalities/cultures I realized that keeping our traditions alive is important. I enjoyed sharing theirs but I really feel that we need to hold on to our own before it gets totally lost. I hope everyone had a nice Easter day!
