Are you sure you aren't from the Midwest???

The mashed potatoes I found for a Christmas recipe. They were just fabulous!! My whole family raved over them. Here's the recipe...I of course layered on the butter. I also whipped up the potatoes and just put them in a crock pot. Had way too many to fit into a baking dish because I doubled the recipe.

Ingredients

* 9 potatoes, peeled and cubed
* 6 ounces cream cheese
* 1 cup sour cream
* 2 teaspoons onion powder
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 tablespoons butter

Directions

1. Bring a large pot of salted water to a boil. Drop in potatoes, and cook until tender but still firm, about 15 minutes.
2. Transfer potatoes to a large bowl, and mash until smooth. Mix in the cream cheese, sour cream, onion powder, salt, pepper and butter. Cover, and refrigerate 8 hours, or overnight.
3. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
4. Spread potato mixture into the prepared baking dish, and bake in the preheated oven about 30 minutes.
LOL! How could you tell? Yes, I am. Born in CO, raised in NE & IA.

Loved the recipes! Thanks so much for sharing. I really enjoyed seeing what everyone else was eating.

We did do a Easter egg hunt for the two kids but I think the most fun was had by my 33 yr old son who hid them! LOL! He spent almost a half hour hiding them in "just the right place". I tried to get everyone to play cards but they weren't going for it. It was a really nice day (in early afternoon) so they all wanted to sit outside gabbing.

With my Mom, brother and kids living here - I wanted to keep the tradition going. I know that when/if the kids aren't here - it would probably be alot easier to do something a little less traditional but... after working around so many people with different nationalities/cultures I realized that keeping our traditions alive is important. I enjoyed sharing theirs but I really feel that we need to hold on to our own before it gets totally lost.

I hope everyone had a nice Easter day!
